To Die For Blueberry Muffins

Huge hit, everyone loved these. Took peoples suggestion of buttermilk, brown sugar for the topping and I didn't have enough freshbluerries so I used frozen, and I still am giving this a 5 star rating. These were great.

Jalapeno Cream Cheese Chicken Enchiladas

i varied this recipe slightly by using taco sauce, and salsa, black beans and sour cream along with the cream cheese and jalapenos in the middle. i also used pork as i was fresh out of chicken, but this was by far the best meal i've made (apparenlty anyways ha ha) They turned out fantastically... I would reccomend this recipe if you're able to alter it a bit with some more pizzaz and filling it will be even better. it is spicy though... probably not for kids.

Todd's Famous Blueberry Pancakes

These are fantastic! The first time i made them, i waited the full hour... the next time I was short on time so i just made them straight away.... to be honest, I didn't notice any difference, and neither did the family! Sometimes i use fresh blueberries in there as well... and I add a little vanilla and cinnamon as well. Sometimes i also mush a banana into the mixture for a nice banana flavor (the family doesn't seem to like the chunks of banana- i just use a masher to mix it all in nicely for flavor!)

Big Soft Ginger Cookies

Best oatmeal cookies i've ever had. Sometimes when i make them, i switch it up, i add craisins, or white chocolate chips.... or regular chocolate chips... i cook them 8 minutes to start with, and they usually need a minute and a half longer, and they're golden brown on the bottom, soft and chewy in the middle! I've got nothing but the highest compliments when i make these cookies!

Broccoli Salad

Delicious, I didn't use the whole amount of sugar... and i only had maple bacon in the fridge... ha ha i wouldn't reccommend that for next time, it was good, i just think it would have been better with regular bacon.
