Irish Soda Bread

This was surprisingly easy to make. I think I either measured wrong on the flour or there's just too much but I had a ton of flour I was brushing off when the bread was done in the oven. I was surprised to know there's sour cream in the recipe! haha I'm not too big of a fan of irish soda bread, but I had to make it, you can't NOT have it. Everyone else absolutely loved it and it did taste right haha so that's a good thing! Will make this again next year

Guinness® Corned Beef

This was sooo amazingly good. I looked at the comments on this recipe, and read about the person who said to fully submerge the meat in the guinness or else it will taste bitter. I used 2 bottles (they were all out of the cans) of guinness and it still was just barely sticking out. I was really nervous but I didn't want to add more beer. It all worked out though because when I added my vegetables later it all sunk into the beer and the end result....pure tender magic! I love corned beef and this by far raised the bar. I will definitely be making this again and again and again.

Penne with Chicken and Asparagus

SOOOOOO good and light and EASY! For a non cooker like me, if I say it's easy, then it definitely is. Probably like cooking mac and cheese for real cookers haha. I love all the items in this so I was so excited to try it out and it came out sooo good. It's only my husband and I so I didn't want to make the whole box of penne, but I'm glad I did because we have tons of leftovers, some he took to work today and me today as well! I am so happy I stumbled upon this recipe. This will DEFINITELY make it in my weekly dinner routine.

Irish Car Bomb Cake

I am in NO means a cook, but I really wanted to make my favorite holiday a good one! I found this recipe and gave it a whirl. I have to say, it was very difficult for someone like me but I did accomplish it! My difficulties were when I made the whiskey syrup, I made it quicker than I was thinking it would take me, so it hardened up before I could pour it into the cake, so I had to do it again. Next, was the caramel sauce! That was the worst part! If it was necessary to have it, I would get rid of it! It was soooo hard! And sticky. When I finally got it as caramelized as I could, which I had to do all of the additions everyone said in the previous comments, the parts that dripped over the cake, but landed on my cake dish would not come off! I had to scrap it off with a knife. I was so scared at that point. Next came the frosting. It didn't thicken up, which judging by 2 of the pictures, there's didn't either, I'm guessing because of the baileys. But it tasted great! Then came serving time. I was terrified, still about the caramel sauce, and that it was going to ruin the whole cake, make it hard to eat and sticky. But it was AMAZING! It was so soft and delicious! You could definitely taste the alcohol, no complaints here! I sent this recipe to my mother in law and sister in law who are both great cooks and waiting to see if they have the same difficulties I did. Great recipe. Would most likely do it again next year!
