Oatmeal Toffee Cookies

I made this recipe once, and I got rave reviews. Now that I look at the recipe again, I have a question. The recipe calls for toffee bits, which I used, but Lori's comment says "chocolate covered toffee bits." They are two different things. Anyway, I'm going to make them again for Christmas with the regular toffee bits.

Pumpkin Gingerbread

I made this recipe without changing a thing. It was delicious! It was a hit at our breakfast buffet at work, and my husband and I both loved it. I will be making this for Christmas gifts this year! FYI, This recipe is almost identical to the Maine Pumpkin Bread recipe. The only difference is in one of the spices and spice quantity, and the addition of baking powder in the Pumpkin Gingerbread recipe.

Spicy Chicken and Sweet Potato Stew

My husband and I both loved this recipe. I made it exactly as specified except I omitted the orange pepper (my husband doesn't like peppers). I combined the flour and water before adding it to the pot. I used cocoa powder as called for, and added the fresh cilantro for the last 15 minutes before serving. We ate it with Italian bread and I added some grated parmesan to mine. I will definitely make this again. Thank you!

DJ's Outdoor Pork Loin with Veggies

I only got as far as the pork, not the veggies, but it tasted amazing. I used a Tyson pork loin rib eye, and my husband cooked it directly on a gas grill. It turned out fork tender. I can't wait to try the veggies.

Whipped Cream Cream Cheese Frosting

I used this recipe to frost and decorate a two-layer cake for my sister's birthday party. The frosting started to slide off the top of the cake as soon as I began applying it. After adding confectioners sugar to thicken it, I finished frosting the cake but it still continued to slide down. By the time we cut the cake, this frosting had slid off the side of the cake into a pool on the cake plate. What a mess!! It tasted good but BEWARE - don't use for a anything but a 13x9 cake in a pan!

Becky's Oatmeal Carmelitas

I made this recipe for a family reunion and it was a big hit. It was very rich so I had some left over. The only changes I made were 1) using heavy whipping cream instead of evaporated milk, and 2) adding a bag of toffee chips to the nuts and chocolate chips. It was delicious! I will definitely make again!
