Runaway Bay Jamaican Chicken

I am in love with this marinade in general. For my family's sake I omitted the habanero and substituted three seeded jalapenos. I seared the chicken over hot coals then cooked it indirectly on the grill. Boil your marinade and pack it on the meat while it's cooking, the chicken is juicy and superbly flavored! This is definitely going into our regular rotation!

Mediterranean Greek Salad

This was excellent. I'm unable to locate sun-dried tomatoes in my area so I subbed 1/3 cup sun-dried tomato pesto. I tossed the vegetables together, then added lemon juice, tossed them again, drizzled olive oil, and tossed once again. I used kalamata olives because I had them on hand.

Amazing Whole Wheat Pizza Crust

Excellent! I mixed the dough in my bread machine, used all whole wheat and added gluten. Made two thin crusts and parbaked at 500 degrees for 5 minutes, then loaded them up and baked at 500 degrees for another 15 minutes. I used a pizza stone.

Black Bean Salad

Beef Barley Lentil Soup

This was just okay. Basically like every other time that I throw a bunch of vegetables and meat into the crockpot. I deviated from the recipe by using stew meat instead of ground beef, and I omitted the potatoes.

I use all whole wheat flour. I mix the dough in my bread machine. It took me awhile to get the rolling right, but now I get them very thin so they are soft and pliable.

Whole Wheat Honey Bread

A little bland, but lots of potential. My electricity went out the first time I made it, so it came out all flat, and then the second time I made it (the next day) the top was concave. I think I'm going to just make a loaf and shape it by hand next time, I don't usually use the bread machine to bake, and I'm starting to remember why. I recommend doing the entire rise cycle twice, it really improves the texture for me. I added a handful of rolled oats, 1/4 cup of wheat germ, 1/4 cup of milled flax seed, and 2 tbsp gluten. I think it needs a little more salt.

I made mine the French way, by just combining all of the ingredients excluding the greens, and letting them marinate in a batch of dressing. It was delicious, and something new to add to the rotation.

These were okay. I used plain yogurt instead of buttermilk, and STILL had too much liquid in the batter. I'll probably make them again, just because they're healthier than the white flour version.

Pancakes

I just made these, with a/p flour, added baking soda and salt, and they came out fine. I was eating them when I realized that I forgot the egg, and they came out perfectly anyway. These could easily be made vegan, without the egg and with soy or rice milk instead of cow's milk. ETA: I made these this afternoon, with egg this time, and they weren't nearly as good.

Easy Indian-Style Chicken

Very good and easy! I used a full can of coconut milk, and an 8 oz can of tomato sauce in place of the water and tomato paste, as I read in other reviews that there was not a sufficient amount of liquid. I also added a little garam masala, and everyone really liked it, even the baby. No left-overs! I made brown rice instead of white, and we had VALONE's Indian Saag on the side, with homemade paneer in it.
