Smothered Chicken Breasts
I made the recipe as described, with the exception of the finish. I pan fried the chicken, baked my bacon (I always do this - it tastes better), used my bacon drippings with the brown sugar to caramelize the onions. After that I layered them as directed but I used sliced provolone cheese instead of shredded monterrey jack because that was all I had. Anyway, I stuck it back in the oven about 1.5 minutes to melt the cheese and that was that. I made some without the onions for my kids and they loved it. I think these would go great over some lightly toasted wheat bread, with light mayo, lettuce and tomato. Excellent recipe!

Chicken Chimichangas with Sour Cream Sauce
Made this tonight. I like everything about it. I just wish that it was slightly less spicy for my young daughters. If I want to do a kid-friendly recipe, I would probably cut out the jalapenos, but maybe do another pepper, such as bell pepper for flavor. The sauce is delicious. I only want to know what to do with the yummy leftover broth made from cooking the meat. Thanks.

Burgundy Pork Tenderloin
Wow. This was fantastic. I didn't change anything and I used Llano Estacado Sweet Red American Table Wine - $6.99 a bottle. The meat is so tender and juicy. It's a very light taste and the wine is pretty good.
