Potato Salmon Patties

Reviewed: Nov. 12, 2003
These were OK, tastes like a very dry-bland Hush Puppy with a touch of salmon. Next time I will adding some shredded zucchini (moisture), use an onion not onion powder (moisture) and add Old Bay Seasoning (flavor). I really want to find a salmon recipe that works for me---as a rule I do not like salmon but I understand the health benefits of eating it regularly so I will try this recipe again with modifications. Also, if you cooked these silver dollar size patties for 5 minutes on each side (as recipe calls for) they would be hockey pucks, try a minute or less!

Strawberry Fluff

Reviewed: Nov. 4, 2003
I made this recipe several times. I love it but I it was a little too sweet for my taste---either way, too much sugar, too much aspartane. I tried one package of flavored jello with a package of a package of unflavered geletine and it was perfect!

Chicken a la King I

Reviewed: Nov. 4, 2003
Easy and very good. I can not imagine leaving the pimentos or the green peppers out as others have suggested---it just would not be Chicken a la King without! Next time I will try to cut back a little on the butter and use evaporated skim milk in place of regular milk in an attempt to spare some fat calories and not loose the rich flavor.

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 2, 2003
Easy and good. Did not result in that "boiled meat" texture and flavor that is often the result of crock pot cooking. I added poultry seasoning and onion salt (instead of onions), allowed one hour cooking time for cheap buttermilks (did not sink), added thawed frozen peas and carrots just before adding biscuits. Turned out pretty tasty. Thanks for all the advise!

Butternut Squash Bisque

Reviewed: Oct. 30, 2003
After alot of ajustments this came out pretty good. Used 1/2 cup canned pumpkin in lieu of carrots (did not have any carrots),baked squash and scooped out---no chopping. Used 4 cups chicken stock, 1 cup 1/2 & 1/2 in lieu of heavy cream, 1/2 t marjoran, 1/2 t nutmeg and generous salt and pepper. Can only imagine how bland this recipe would be without these ajustments. Will serve this tommorrow as "Jacko Lantern Soup"---eeeek! Happy Halloween.

Bubble Pizza

Reviewed: Oct. 30, 2003
Easy and very good---too good if your know what I mean! I used the cheapest buttermilk biscuits available. Also used less than 1 ounce of pepperoni diced very small.Used 15 ounce can of pizza sauce. Used italian sausage instead of ground beef---browned and rinsed it very well. Turned out great, most certainly not dry or doughy.

Delicious! Like every one else I pumped up the calories by browning onions and celery in butter and using chicken broth.

Easy Asian Baked Chicken

Reviewed: Oct. 27, 2003
Pretty good and very easy. I used chicken breasts and legs---the legs were very tasty. Next time I will use only use chicken legs. I also sprinkle chicken with a little red pepper. Sauce is very salty. I would not pour this marinade mixture over the rice again. I would strain the chestnuts and peppers out and serve only these on rice.

Baked French Toast

Reviewed: Oct. 26, 2003
To avoid the the "soggy bread" complaint, eyeball your bread mixture. You need to consider the density of bread and size of eggs used. I used 1.25 lbs. of french bread and 10 eggs(med). I reduced brown sugar to 1 cup and used only 1/2cup butter. I highly recommend using maple syrup instead of corn syrup. Also, I tore my bread into egg size pieces instead of slicing. This was delicious. Like a bread pudding--I would make it often if it was not so fatting. Ohhhhh it would be blissful to a skinny person!

Connie's Zucchini "Crab" Cakes

Good. I made these twice---once fried and once baked. Saved lots of calories by baking and I thought it was actually better. I used bread crumbs instead of flour to dust the pattys.

Only as good as the quality of meat and barbecue sauce used. Convenient because labor is done hours before dinner time. These are good but not the the best!

Swedish Apple Pie

Reviewed: Oct. 21, 2003
Very quick and easy to make. I made the basic "as is" recipe and also made it with Rose's recommendations. Hands down Rose's version was better. I also would like to recommend doubling the amount of apples(sugar and cinnimon accordingly).I thought the original recipe tasted more like an apple brownie---what ever that is!

Apple Pie by Grandma Ople

Reviewed: Oct. 14, 2003
Beautiful presentation! Tastes more like a taffy apple pie than the traditional apple pie. Next time I will add traditonal apple pie spices and see what I get. For those of you who elect to split the sauce between the apples and top crust(which I recommend) have your lattice strips cut and ready to go before you prepare sauce. This way you will avoid the "sticky sauce" problems that others have encoutered. You will need to work efficently.

Very good exactly "as is". I can only imagine how delicious these would be with cream cheese frosting! I used canned pumpkin. Baking time was more like 30-35 min.
