Easy Meatloaf

Reviewed: Jan. 11, 2004
Easy and very good. I used onion powder (unfortunetly no onions eaten by this family) also kicked it up a knotch with a little powdered ginger, seasoned bread crumbs, celery salt and a little balsamic vinegar in sauce. What is everyone in the reviews talking about " too sweet"?---"Two cups BS",the recipe reads 2T BS!

Better Than Sex Cake II

Reviewed: Jan. 3, 2004
A glorified box cake. I liked the topping concoction very much but next time I will difinitly make the cake from scratch--- maybe then it would rate "the best". What a stupid name for a cake!

Best Chicken Salad Ever I

Reviewed: Dec. 28, 2003
Pretty darn good. I used dried sweetened cranberries and walnuts in lieu of rasins and pecans---no reason other than that is what I had on hand.

Chilled Lemonade Dessert

Very tasty. If I made it again I would put it in a grahm cracker crust and serve with a dab of cool whip.

Squash with Tomato and Feta Cheese

Reviewed: Dec. 18, 2003
This was an interesting concocsion. I would make it again. I used butternut squash, a regular skinned/seeded tomato and yellow onion beacause this was what I had on hand. I think acorn squash would probably have made made this even better. It tasted alot better the second day when I warmed it up for lunch. The flavors seemed to have melded.

Creamy Rice Pudding

Reviewed: Dec. 15, 2003
Very easy. The first time I made this recipe I made it with long grain rice (not knowing the difference between long, med, and short) and half and half. Second time I made it with medium grain rice, skim milk and less sugar. The medium grain rice made a huge difference in the end product, do not make the mistake of using long grain rice the pudding will just not be the same! Also, no need to use half and half it was just as good with the skim milk---save yourself the calories! I liked it better with a little less sugar.

Smoked Salmon and Egg Salad

Reviewed: Dec. 3, 2003
I made this with canned salmon and with smoked salmon and let me tell you there is a big difference in the results if you use anything but smoked salmon---smoked is the way to go! I used 2T dried dill. Loved it on Chicago flat bread!

Lemon Bundt Cake

Reviewed: Dec. 3, 2003
I usually bake cakes from scratch but this box cake concoction is pretty darn good. Absolutely does not need frosting---maybe a dab of cool whip on the side, strawberries or rasberries would be nice too. Cake is pretty light so if you are using a fluted bundt pan be sure to grease the pan well and use a gentle hand upon removal.

Indian Chicken Curry I

Reviewed: Dec. 3, 2003
I love the savory taste of cury however I do not like eyewatering curry pastes or hot powders therefore I used common supermarket curry powder with 1/8 t of green curry paste. I used 1/2t (plus) powdered cardamon instead of pods, 1 bay leaf, 1/4 t (plus) cumin and tumeric, and one chicken bullion to "kick it up a notch" . Without these additions this recipe would leave somthing to be desired. I think using a whole chicken and removing skin after cooking would be tastier than using breasts only. Maybe I will try this next time I get a taste for curry!

Cool Whipped Frosting

Reviewed: Dec. 2, 2003
Resembles Bavarian Cream is a good discription of this frosting. It was easy to make and very good. I was surprised that it held up so well on a two layer cake.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Dec. 2, 2003
So-so until I added a cup of prepared spaghetti sauce and ground black pepper which "kicked it up a notch"! Also if I were to make this again I most difinetly would not use heavey cream but instead use evaporated skim milk. As is, this recipe is a death sentence!

Baked Corn I

Reviewed: Nov. 27, 2003
If you are looking for kid friendly corn casserole, this is it---it has a very delicate taste. Many corn casseroles include onions, peppers and cheese(which can be very good) but this recipe is subtle.I served it to 27 guests this very Thanksgiving day and it got "the best reviews". Can not get much easier or better than this!

Slow Cooker Stuffing

Reviewed: Nov. 27, 2003
First let me say I consider myself to be an experienced cook---I made this stuffing for 26 guests this very Thanksgiving day. I would have told you yesterday it was impossible to make a bad stuffing but today I can say that this recipe was nothing more than a gummy mess! I used only 2 1/2 cups broth, clearly 4 cups would have been soup. I took it out of the crock pot after 3 hours (because it looked like glue) and baked it for 40 minutes. I would never recommend this cooking method or make this recipe again. Very disappointing after all that chopping. Fortunatly I made another stuffing recipe that saved the day!

Restaurant-Style Coleslaw I

Reviewed: Nov. 21, 2003
I am a cole slaw lover and this was very good. Yes, this is a watery sauce but very tasty. Use a slotted spoon and think about all the calories you left in the serving bowl--- that should make you even like this recipe better!

Blue Cheese Burgers

Very good recipe just as is. The blue cheese flavor is profound (I can not imagine adding more). Probably not a kid friendly recipe but a must try for more developed taste buds! Try this with ground turkey---it is great!

Zucchini Patties

Reviewed: Nov. 19, 2003
Very good. However they are heavy duty---they would be better served as a vegetarian meal than a side dish. I added Old Bay seasoning.

Herbed Pork and Apples

The meat rub was good. I would skip the apple maple syrup baste if I were to make this again---kind of had a burnt taste. Applesauce on the side for me next time!

South Beach Chopped Salad with Tuna

Reviewed: Nov. 19, 2003
This was a nice healthy blend of vegetables. I did not use tuna ( had it the day before). I used a hard boiled egg instead. Also added some poppy seed dressing to the original dressing---I thought it need a little something sweet. The original dressing would be fine if I was dieting. Also liked the stacking approach---veggies stayed crisp provided you do not add salad dressing. I was able to eat this salad two days in a row and it was just a good the second day.
