Floating Island Punch

Reviewed: Aug. 31, 2003
I made this for my sister-in-law's luau, doubling it for the large crowd, and it disappeared VERY fast! Everyone loved it, and I look forward to an occasion to make it again as soon as possible...

Roasted Rack of Lamb

Reviewed: Nov. 2, 2003
My hubby and I both loved this recipe. The only thing I would do next time (and there WILL be a next time)is reduce the salt-perhaps not season the rack itself with salt...Thanks for the recipe!

Baby Back Ribs

Loved the ease of this one. And they came out SO tender! Just make sure you like the barbecue sauce you use.

Becky's Chicken Salad

Reviewed: Dec. 24, 2003
I thought this was pretty good chicken salad. Not exactly exciting, but tasty. Good for a "salad lunch" with the ladies...

Green Bean Blue Cheese Salad

Reviewed: Feb. 2, 2004
This salad was pretty good. However, I agree it would be better to use less oil and vinegar. I loved the combination of pecans and bleu cheese.

Easy Broccoli Quiche

Reviewed: Feb. 6, 2004
This was good. Not as easy as I'd hoped, but not exactly hard. Next time I would reduce the pepper by half, since I found it a little spicy for my taste. However, I'm not a spicy food lover in general, so take that with a grain of salt (or pepper--hehe). Also, it may have been my oven, but I had to cook it an extra 10 minutes before the filling was set.

Mocha Biscotti

Reviewed: Feb. 9, 2004
I personally liked the level of the coffee flavor in the original recipe. The only thing I had a problem with was the chocolate to be drizzled on top. I've made this recipe twice now, and the chocolate never "drizzles". Perhaps I need some advice on melting it...

Dad's Steak Rub

Reviewed: Jun. 25, 2004
I thought this looked intriguing, so I tried it. I felt it called for way too much pepper, though, so I halved it. (I'm not a pepper person) It was very good!

This recipe made EXCELLENT, moist muffins. It is in my recipe box to be used again!

Apple Crumble Tart

Reviewed: Sep. 8, 2004
This is a DELICIOUS recipe! I substitued oats for the almonds, since some of my family don't care for nuts. And instead of making the sauce, used a caramel sauce drizzled over it. Yumm! This is bound to be a family favorite.

Kalua Pig in a Slow Cooker

Reviewed: Apr. 6, 2005
I made this for a small scale luau, and everyone loved it. I couldn't locate any hawaiian sea salt, and was without a measuring spoon, so I probably didn't use enough salt. However it tasted very good, and the servings were generous!

Pumpkin Bread IV

I loved this recipe just as it is. I baked muffins with it, baking at 350 for 30 minutes.

Home Style Macaroni and Cheese

Reviewed: Aug. 30, 2006
I liked this a lot. It was easy to make and tasty. The cream cheese gave it a creamy taste my hubby couldn't put his finger on (I didn't tell him, since he doesn't like cream cheese) Next time I will probably reduce the amount of breadcrumbs, though. It seemed a little excessive...

Ratatouille

Reviewed: Feb. 25, 2008
This was OK. It was a lot of prep work, but easy. The taste was kind of bland, though. If I make it again, I'll add some more flavoring. Also rice, couscous or something would have been a good idea, as others have mentioned.

Raspberry Peach Crumble

Reviewed: Feb. 25, 2008
Wow! This is really yummy! And easy, too. That's important to me ;) It was pretty juicy, though, even though I added 1 Tbsp of cornstarch to thicken it up. I will make it again for an easy, warm-you-up treat.

Pasta Bean Soup

I loved this very easy recipe. The only change I made was to use vegetable broth instead of chicken broth so my vegetarian daughter could eat it.

Alfredo Sauce

This was very easy and yummy. It was a bit thin at first, but thickened as the pasta sat for a few minutes. I would make it again

Triple Berry Crisp

This was very good! I scaled it down to 6 servings, which worked great. I served it with vanilla ice cream instead of the whipped cream and that was richly yummy!

Peach Pie

Reviewed: Aug. 11, 2010
This was pretty tasty. And easy, not counting peeling the peaches. Despite someone's recommendation to boil them for 1 min. and plunge into cold water, I still needed to use a vegetable peeler. Also, use small to medium peaches. I had 10 large peaches from Costco and it made 2 pies.

Connie's Zucchini "Crab" Cakes

Reviewed: Aug. 23, 2010
This was good. But is not a substitute for a 'good' crab cake. I was disappointed after reading all the reviews. The texture of the zucchini does not mimic the texture of crab. It is important to drain the zucchini thoroughly before using it in the recipe. I have not decided whether to make this again. Perhaps for a potluck or party.
