Ham and Hash Brown Quiche

My Family of 5 loved it! Very easy to make. The first time I made only one quiche, and there wasn't quite enough. The second time I made 2 and we only had 1 piece left. Great meal for any day of the week.

Balsamic Baked Tilapia

This was perfect for my husband's low carb diet he has been on. I didn't have blue cheese so I used feta. The combination of balsamic vinegar with the cheese and mixed greens really makes for a nice tilapia salad.

Applesauce Cookies II

These cookies were good. Not too sweet. I doubled the recipe and baked them for about 20 minutes instead of 10 to 12 minutes. A little powdered sugar on the top made them look more appealing.

Detroit Hot Honey Wings

My Family loved these wings. the only change I made is to pour the butter sauce over the wings after grilling and then bake an additional ten to fifteen minutes in the oven at 350 degrees.

Kale and Quinoa with Creole Seasoning

We gobbled it up! This was the first time I made quinoa for my daughters and myself, and the end result was very satisfying. I used onions in place of shallots, and next time I will use twice as much creole seasoning and no salt. The quinoa is quite filling. A bowl full of this kale and quinoa was a meal for me. Lots of health benefits too!

Chicken Soup III

This was a great recipe to get me started and able to use ingredients I had on hand. I used a rotisserie chicken from my local grocery store deli which I believe cut back on the fat. I placed all ingredients in a crock pot except for rice and let them cook on high for 3 hours then reduced heat to low for 3 more hours. Strain liquid with cheesecloth and chill to allow fat to rise to the top. There really shouldn't be much fat to skim. Return liquid along with deboned chicken, mixed veggies, and cooked wild rice. I did not add the herbs and spices a second time as this recipe suggested. The soup turned out rich and flavorful. Thank you for sharing your recipe!

Chicken Wranglers

Thanks for sharing your recipe. Another hit with my Family. My husband even saved one for breakfast for the next morning. At first I wasn't sure if I wanted to take the time to pound, wrap, and dredge, but It was really quite easy to prepare. I did not use bacon as I didn't have any, and I used Italian seasoned bread crumbs. I also switched the oven to broil for the last five minutes to brown the top. Next time I'm going to spread a little cranberry mustard between the chicken and ham slices to add a little kick.

Enchilada Sauce

This was amazing! My entire Family loved it. I followed the directions exactly and the end result was a rich and flavorful sauce. I used the entire batch in and on top of my baked chicken enchiladas which serves six.

Summer Squash Pizza Crust

This is a good crust, and a healthy alternative to a traditional crust. I placed the shredded zucchini in cheesecloth and squeezed out the moisture. Then I placed the zucchini and cheesecloth between a folded clean dish towel and rolled out even more moisture with a rolling pin.

Home Style Macaroni and Cheese

This may sound funny, but when I took a bite it reminded me of my grade school's mac and cheese (Husman Elementary, Crystal Lake, IL). It's delicious, but really threw me for a loop. Some things just stick with you forever. My kids enjoyed it as I did because it is creamy and doesn't harden as soon as it begins to cool a bit.
