Boilermaker Tailgate Chili

This is a good but not great recipe. No way is the prep time 30 minutes-I would say closer to an hour. It makes a TON of chili, so be prepared. I followed all these crazy ingredients to the letter and refrigerated over night and let simmer in my crock pot. I thought it was a little thin and for all the time and expense, I've had much better chili. Obviously, many others disagree with me. Must be a lot of Purdue alum out there voting :)!!

Chuck's Favorite Mac and Cheese

Loved it. However, use the sharp chedder. I added another 1/2 cup. It is a nice alternative to the regular mac & cheese. Minimal effort to prepare.

Chicken Enchiladas II

Great base recipe. Really easy. We enjoy spicier food so I added red and green pepper. I also used and Old El Paso Chicken Enchalida soup once and was also very tasty. Double the recipe, barely feeds a family of four!!

Baked Chicken Nuggets

DeLish! Very easy to make. I used a raised rack in my covection oven as noted by another user. You can modify the breadcrumbs to your own preference. Mine included some garlic powder and red pepper instead of those listed. Nice alternative to fried. I used chicken strips because I'm too lazy to cut them up!!! Just make sure they are about the same size. Baked about 20 mintues

Mini Meatloaves

So easy and so good! I use the silicone baking cups and they work perfectly. I add more spices...garlic, pepper etc. Serves w/ mash potato, gravy and a veggie. The kids love it! Maked great sandwiches too

Burgundy Pork Tenderloin

Almost foolproof. I too seared the pork and used Merlot. Made the gravy w/ wine and water. Add onions to the sauce. It was really good and incredibly easy.

Shelia's Dip

Actually, I'd make this with less garlic & onions and/or no salt. Add chopped mandarian oranges (drained). Either roll into a ball and cover with pecans or spread in a pie plate a cover with pecans. Makes a great dip!
