Heavenly Potatoes and Ham

11-17-09. Homey, but good. I usually don't try recipes with cream of ANYTHING soup in it because I don't want my food tasting like it came from a can. This recipe is an exception. I couldn't detect the canned soup flavor at all. It's a good way to use up leftover ham & a couple potatoes. I mostly halved it using: 2 Idaho potatoes (cubed & boiled till just tender), 1/2c fatfree (with all the fat in the butter & cheese, it didn't separate) sour cream, 3T melted butter, all the soup, 1c cheese, 1/4t onion powder, 2c ham & not much crumbs & 1T melted butter. I think if I used even half listed, it would be too much. It is a dressed up sidedish, but it gets you out of making something new for a night! 8-7-11. Boy, 14, had two servings. VERY unusual. I must have used more than two potatoes the first time. Too much sauce this time, which I faked using chicken broth, a little milk & cornstarch. Two parts breadcrumbs, one part parmesan cheese, one part melted margarine on top.

I'll get less corned beef next time. For hash, though, it was good. Use less potatoes or it will never go away. Ha.

Fairy Godmother Rice

I wanted to love this recipe. Afterall, fairygodmother rice is a great name. Unfortunately, it's onion-flavored rice with crispy noodles. I halved the butter & soup mix; & used instant brown rice. It was okay the first night. The rest was put into soups.

Best Lemonade Ever

Really good. I doubled the recipe & used 3 cups sugar & it was just right. Two & a half was too little. 'Served it at a summer birthday party & got raves from kids & adults.

Awesome Grilled Cheese Sandwiches

As the other reviewers said, only butter edges & none in the middle. I served them at kid's summer birthday party. Great for speed, but a little too crouton-like for my taste. Some were more than just crispy. Those babies were hard. I did them 4-5 on each side at 400.

Salmon Loaf

Good way - relatively - to use leftover fish. I had leftover red snapper. I didn't add the butter, but instead added about 1 tsp horseradish, 1 Tbsp parmesan cheese, & fish stock to moisten. I subbed wheat bread crumbs instead of cracker crumbs, too. I also made patties instead of a loaf. No, I'm not very good at following a recipe. ;D 'Cooked them about five minutes each side. Be sure to make some cocktail sauce to go with them.

Pumpkin Bars IV

To reduce oil, I subbed 3/4c oil & 1/4c water. To reduce sugar, 1 3/4c sugar & 1/4c applesauce. I also didn't add the ginger & reduced the nutmeg to 1/4tsp. I wanted pumpkin bars, not gingerbread-tasting pumpkin. It was very good, but takes longer to bake. I'll try a larger pan next time or maybe I'll skip the water. I added half cup raisins, too. It was a good idea.

Banana Oat Muffins

'Doubled the recipe with these amounts: 3c flour, 1/2t cinnamon, 2c oats, 2/3c sugar, 4tsp powder, 2tsp soda, 1tsp salt, 2 eggs, 1 1/2c milk, 1/2c oil, 1tsp vanilla, 2c banana. They were good, but I think brown sugar would improve the flavor. 3/13 Trying (double still) w 3T melted butter then adding remaining oil to equal 1/2. 4 bananas were 1 1/2c so added 1/2c applesauce. Used 1c wheat flour, 2 white. 1/3c white, 1/3c brown sugars. Forgot the cinnamon so put 1/2t in 1T white sugar & sprinkled on top before baking. Downside: These are one of the muff recipes that you have to wait until cooled to have, if you use liners. They stick until cooled. Sigh! ;D Good, moist, 'think you need 3/4c sugar or the full 2c bananas (not 1/2c applesauce filler) to have them sweet enough. 2/3 isn't unedible, but that little extra sweetness they'll be eaten.

Pumpkin Crisp

Eventhough I messed up the cake mix part, my family loved it. Use less butter in the crust for sure. Nutmeg goes a long way so I reduced it to 1/4t. I didn't have evaporated milk so I subbed 3T melted butter & enough whole milk to equal 2/3c. I'll try it again without talking. That should help. Ha.

Salmon with Brown Sugar and Bourbon Glaze

Very pretty, but WAY TOO SWEET - & I used 1/3c brown sugar. I love what most people call "too rich" or "too sweet," but this baby is too sweet for even me. I'll try substituting some soy sauce for the bourbon & reducing the brown sugar.

Creamy Chicken Lasagna

2/03 Good. K (4 yrs) liked. I used 2c leftover chicken & made my own sauce (15oz tomato sauce, 1c crushed tomatoes, 2 1/2tsp sugar, 1/2tsp basil, 1/4t oregano & 1tsp salt). I added an egg to the sauce for binding. Topped with the 1c mozzarella mixed with 1/2c fresh parmesan. (By the way, 1/4 of a 12 ounce box of lasagna noodles is 6). I try to reduce sugar whenever I can soooo - just a little 411 ;) - Ragu has 6g sugar per 1/2c, Tomato sauce as 4g per 1/2c. Also, more 411 :), name brand (I forget which brand) is substantially more salty than the store brand. I made my usual sauce & it turned out salty with the name brand. Surprised me.

Cranberry Loaf

11.18.03 Edible fruitcake! Ha! Seriously, it's good! Maybe I'll even try a little pineapple & less oil next time. It's very good. I just can't leave a good recipe well enough alone. :D The only changes I made are substituting an additional 1/4c graham crumbs & 1/4c oats for the nuts due to allergy. 'Didn't have the orange rind either. Oh, well. :) A third cup oil isn't too much, but a quarter cup is fine as well. 12.12 Double recipe. 'Tried adding a can of crushed pineapple & while it wasn't bad, it wasn't better. I drained it & added enough orange juice to equal a cup. It just lessened the orange flavor, but really didn't add any pineapple flavor - even the pineapple pieces. Strange, but true! :D 'Stick with the original - for now. I'm thinking of trying blueberries or half blue, half cran.1/2012: Tried frozen homegrown (sweet) blueberries & notsogood. This bread needs a stronger flavored fruit. I couldn't find any cranberries, even frozen, so used all blueberries - & more than it states. Mostly tasted the orange & it should be an afterthought, not first impression. 'Stickin' w cranberries! Oh, I forgot to tell ya there's NO need to chop those berries. What a waste of time. As you slice the bread ... voila! 12/12/12 Tried the 1c confec, 2T oj, 1t vanilla glaze poked & poured while hot in pan. After 10, removed. More moist & sweet, but not a big flavorchanger. Good either way. Tried for dbl recipe, 3/4c oats&no addt'l gc for nuts. No dryness problem :)
