Chocophiles

Very chocolately - nearly or too much - &, basically, a chocolate cookie with three types of chocolate chips. 'Not so special eventhough it sounds like it. 'Think they could be, but not as is.

Sweet and Sour Sauce I

This was better than the "fruity" one, but not quite "it," according to "The Girl." :D When asked if she'd like it sweeter, she said "yes." She's funny about pineapple, but maybe I'll try Bikerfamily's suggestion on the Buzz of subbing with pineapple juice, or part pineapple juice.

Garlic Green Beans

I added onions & used frozen green beans. I liked the parmesan cheese, but it was kind of a mess. Maybe adding panko with the cheese would be a good idea. Add then don't stir.

Fruity Sweet and Sour Sauce

I added the quarter cup ketchup. 'Used Dole pineapple juice & it was a li'l bit too pineapply. :D Oh, I used rice wine vinegar instead of one more tart. Maybe it was a combo of the two. It was easy; did the trick; but sweet & sour girl didn't like it.

Warm Blueberry Cobbler

In an attempt to use up frozen berries, I upped things. :D 'Used about 5c frozen berries, didn't add the lemon juice to them; just buttered the 9x13 & let 'em roll. With the berries being sweet, I struggled to use all the sugar & ended up adding 1 1/2c with the 2c flour & 2 eggs. I added 1T fresh lemon juice to the batter. I drizzled 10T butter. Kept the temp at 375; 45 minutes. 'Liked it. 'Wasn't overly juicy as others "warned." 'Think I'll go down another half cup sugar & maybe add that one more T lemon juice to the batter = double recipe: 2c flour, 1c sugar, 2 eggs, 2T lemon juice & 5 or more cups berries. It isn't all that pretty, but we're making it to eat, not look at. I like cobblers that aren't square pies or biscuits on pie filling so this was very nice. Thanks, Dawn!

Bodacious Broccoli Salad

'Only change was half a cauli for a one of the broc. :D I allowed it to sit overnight, but still had to make half as much more dressing. No big deal doing that. This was good, but not as good as others.

Alyson's Broccoli Salad

Simple & delicious recipe for broccoli salad. I like the broccoli, cauliflower & many more ingredient salads better; but this was very good & much faster to make. I let marinate in the fridge overnight & sprinkled on the sunflower seeds right before serving. Quite yummy. I'm sure a cup would be overkill, but my bunch of broccoli may have been small. I'd use a bit less sugar next time, since the raisins add sweetness; or maybe a splash of vinegar. PS This submitter's Baked Pumpkin Bread is great!

Pork Rites (Taverns)

Well, maybe a pound here is less than the first reviewers. Mine was soupy. I used half the meat - so, essentially, doubling the sauce (except for the salt) as all previous reviewers suggested. I added a half pound cooked, crumbled Italian sausage to thicken it up. It helped. :) This is a slightly tangy sauce, which I usually don't "go" for; but it was so subtle here, I liked it. 'Also don't usually try ketchup (as a key ingredient) recipes - 'Couldn't detect it. Nice! I sauteed onion & garlic first then completed; thickened with cornstarch, a t & a half. I'd add less water rather than thicken; 'can always add it if it's needed. As for the Italian sausage addition, I liked it; but wouldn't go out of my way for it.

Cowboy Oatmeal Cookies

I've been looking for "the" perfect soft & chewy cookie & this is it - subbing shortening for the oil & more oats for the chips - add 1t cinnamon. 375, ungreased sheet, ten minutes. If refrigerated, 11 to 14 minutes. Let rest a couple minutes before removing. ('Still thinking of you, Lela!)

Cottage Cheese Chicken Enchiladas

I used 3c precooked chicken, 4oz can chiles, a pound of (fullfat) cottage cheese (which is about 2c), 1T taco seasoning - along with the listed amounts of half cup onion & sour cream, but reduced salt to 1/2t as suggested in reviews. Even with half t, the cottage cheese mixture (I combined almost all the shredded with the cottage) was still salty; but not in the enchiladas after baking. I used about two spoonfuls of the chicken & the cheese mixture in each. A little rice or beans or even more of that would've been good; or fewer enchiladas. I only had reheated leftovers, but it was pretty good. I'll probably make again sometime, different than usual. Oh, I'd add more onion & two cans of chiles. I don't see even adding the additional can would make this spicy - even mildly spicy - so if you're going for any heat, you'll have to add it elsewhere.

Easy Enchilada Sauce

A bit - just a bit, not too much - chilitasting; but, yes, chili powder & cumin will do that. 'Couldn't find 10oz so removed 1/4c & froze by Ts for those weird recipes ... Using it in a baked recipe, add 3/4 to 1c more liquid; as is, half cup. Using McCormick, not cheapo, chili powder is a have-to. My usual cheapo one is half salt. :o Yeah. Update: With all that chili powder, the flour really isn't needed - even with adding more liquid.

Blueberry Oat Muffins

I followed the recipe! I followed the recipe! (Okay, using frozen berries, but description says it's okay! :D) Good muffin! The cinnamon is almost undetectable, but gives a nice appearance. 'Couldn't tell about the oj either. That's fine. It's a little more dense that most muffins, but that's not bad, just a difference I noticed. Ohhhh, I upped the berries by a quarter cup. 'Surprised they were done in twenty minutes. Sum up: Not all that different than usual blueberry muffins, but definitely worth making. One more thing, using Rumford baking powder (without aluminum) doesn't leave a bad taste. Go for aluminum-free.

Chocolate Banana Bread

I really like banana cake with chocolate frosting. I thought I'd like this about as much, but didn't. 'Wasn't crazy about the cocoa in the bread; like the idea of the chips though. They were chocolate-candy-ish-tasting. Again, thought I'd like, but didn't. Sooo, pretty good bread, but didn't wow.

Heirloom Blueberry Cake

'Only changes are increased salt to 1t & berries to 3c - Oh, & added a t of vanilla. :) Shorecook recommended the glaze from this .... http://allrecipes.com/recipe/yummy-lemon-coconut-loaf/detail.aspx ... & it was a good idea! Incredibly easy glaze. The cake is good without it, also. 'Not too cinnamony, but enough to color it. It's light & has a slightly crispy top. 'Only issue was that it dimpled, which may be because I used frozen berries. This wasn't sticky on the unglazed part until two days after it was made. That's supposed to be a compliment. :D 'Glazed side is still "like new." Ha-ha! This is a full 9x13, quite high, not too high, or rounding over the pan; just next time, I'll halve the recipe.

Ham and Cheese Egg Bake

Eight ounces seemed like a lot of ham so I used less. 'Used less cheese, too & it was still a bit overcheesy for me. Kinda fluffy/creamy omelette-ish. A good beginner recipe for sure. The bread wasn't so obvious - more to absorb the egg mixture. Easily improved with add-ins. :) I added a bit of heavy cream to the eggs, too.

Relatively fast & quite filling! 'Might want to consider adding more Minute Rice & broth. It's quite salty. 'Definitely not enough to stop me from having two bowls though! :) I used homemade broth & increased it by a half cup or so. Thanks, Gammaray! And your idea of adding to scrambled eggs & wrapping in a flour tortilla is on for tomorrow! :D
