Spinach Basil Pesto

I loved this recipe because it uses spinach, but tastes like basil. I am too cheap to buy pine nuts so I used walnuts and it's still delicious! I didn't use all the oil because it didn't seem to need it. I also made it with sage and it's delicious too. The basil is better, but it's a good way to use up sage.

Blueberry Coffee Cake III

Yummy! I took the suggestions of other reviewers - floured the berries before folding them in. Added vanilla and added 1/4 cup more of milk and didn't use the cinnamon in the topping. Two thumbs up!

Spinach Salad with Honey Dressing

This is (obviously) a sweet dressing and is oh so good for a fruit and nut salad. I usually add whatever fruit I can chop up and the sprinkle the tossed salad with shredded coconut. It's a salad that tastes like dessert. Yum!

Cinnabun Cookies

5 stars for flavor, 2 stars for appearance. I'm going to try these again because they are tasty, but they definitely didn't look like the ones in the pictures. Next time, I'll try adding more flour and cutting them into 1/2 inch slices, instead of one inch slices. **update** I've made these many time because they taste GREAT, but they spread like crazy and they don't look anything like the picture. I'm an experienced baker and can't figure it how to master these.

Quinoa with Sweet Potato and Mushrooms

I like all the ingredients in this, but it needs a sauce so something to make it interesting. The cayenne adds heat, but other than that there isn't anything that gives this a lot of flavor.

Spicy Sweet Potato and Coconut Soup

very good. I used cubes of butternut squash instead of sweet potato because it's what I had on hand and it's delish. I also used fish sauce instead of the salt. The crazy thing is that you don't taste the sweet potatoes (or squash) at all - it just tastes like a thai dish. Yummy!

Banana Banana Bread

I know it's a faux pas to make changes and review the recipe, but I did tweak this to make it more heart healthy. I substituted ground flax seed meal for half the oil, I used 1 1/2 cups of white whole wheat flour and 1/2 cup of oatmeal. It's a great dense banana-ey bread

Easy Apple Coffee Cake

This was more like a bread pudding . . . perhaps I should have baked it longer, but the way I served it, it was more the consistency of a bread pudding. I agree that it's an apple cake, more than a coffee cake. The taste was pretty good, but not my preference.

Peppery Cheese Bread

I made this recipe with cubes of pepper jack cheese and added fresh rosemary and chopped garlic. It's delicious and decadent! I think that the slow rising time is due to the cold sour cream and egg that are added to the yeast. If the sour cream is warmed up before adding it should speed up the rising time. I wouldn't heat the egg though b/c that would cook it.

I added pepper & lemon juice to this and I think it really helped. I used bouillon instead of chicken broth and I think that was a BAD idea! I'll try again with chicken broth.

Spicy Basil Chicken

This was really good and really easy. The one thing is I would change it to garlic salt to taste. It was SO salty that I ended up adding a can of coconut milk. The coconut milk made it really good too though. I too used fish sauce instead of oyster sauce b/c I had it on hand.

Basil Chicken over Angel Hair

Excellent recipe! A few suggestions: 1. Use a short pasta - ziti, penne, rigatoni, etc. The sauce is thin and slides ride off the angel hair so you have several bites of either just pasta or just sauce. With the shorter pasta you get both in one bite. 2. Top with more fresh basil (or sage or oregano or all three) 3. Double the garlic

Peanut Butter Pie VIII

Very tasty! I love peanut butter, but I don't like peanut butter pies that have the cream cheese fluff. This pie has lots of peanut butter flavor without being too rich. I couldn't get the egg whites with sugar to form stiff peaks - they were more like marshmallow fluff, but it baked up fine. I'll definitely use this recipe again. I may recommend putting it in a chocolate crumb crust. I referred my mom to the recipe and she let me know that you can make the custard easily in the microwave. Just stir it after a minute or two until it's thickened. So much easier!
