Black Bean Salad

This is absolutely delicious. The only changes I made is I added 1 19 oz. can of black beans (rinsed) and 1 15 oz. can of corn. I didn't measure the cilantro so it may have been a bit shy of a cup and I added fresh garlic instead of garlic salt. Everything else I followed exactly and this salad is amazing! Thanks for sharing it!

Peppered Shrimp Alfredo

This was very good and so easy, too! I did find the cayenne a bit overpowering, though, and would only add 1/2 tsp. in the future. Otherwise this was an exceptional dish and we will definitely make it again!

Roast Beef Burritos

This was awesome! Like another reviewer, I used salsa in place of the tomatoes and taco sauce, then used part of the cheese inside, wrapped and topped with remaining cheese, baked for 15 min at 350 degrees to crisp up a bit. Other than that, I followed the recipe to a T. Garnished with sour cream and shredded lettuce. Very good and a great way to use up left over roast beef.

Bacon Wrapped Pork Medallions

Red Velvet Cake

This recipe was awesome, the cake was so light and fluffy. My neighbour said I should open a bakery this cake was so good! I used the icing recipe from Red Velvet Cake II for this cake.

Boston Baked Beans

This was awesome - very close to another recipe I used to have. The only thing I did different is used a ham bone, which I added during the simmering part and then diced in the ham. I also finished it off in the slow cooker because I was using the oven for something else so I just added an hour or so to the cooking time.

Kabob Marinade

Wonderful tasting marinade. I halved the recipe (except the garlic) and omitted the meat tenderizer and marinated for about 7 hours and then drained and used the thinly sliced beef in a stir fry. It was amazing but I think I would try to marinate for the full 24 hours next time. Thanks for the great recipe.

Tangy Slow Cooker Pork Roast

I decided to try this as I had all of the ingredients on hand and it looked fairly easy to prepare. Only change I made was that I used brown sugar (about 3 TBS.) and used garlic cloves (2) in place of the garlic powder. This turned out so tender and YUMMY! Next time I think I will add some carrots and baby potatoes to the crock pot for a one pan meal! Thanks for the awesome recipe.

Sausage Stuffing

I am giving this five stars as it is very close to the stuffing I make for my family. The only changes I make is to add mild Italian sausage (casings removed) and I use the drippings from the sausage, no additional butter (or very little). I like to dry out my bread cubes as well. Then I also add sage, parsley, and thyme as well as the poultry seasoning. I add to taste and have never measured it. When you put any additional stuffing into a casserole dish, place the neck of the turkey on top and then cover with foil. This will keep your stuffing moist and then you can mix that with the stuffing from the turkey. Yum, yum, yum - we love it!

Strawberry Spinach Salad I

Excellent! I followed the recipe except that I substituted roasted pecans for the almonds and added some sliced red onion and crumbled goat cheese. The dressing came out very creamy; I followed another suggestion and made it in the blender and it was quick and easy. I have enough left over for another salad! Thanks for the great recipe.

Spicy Honey Mustard Pork Roast

Excellent! After reading some reviews I cut the pepper back to about 2 tsp. but would probably increase that to at least 1 Tbs. next time. I put just a little water in the bottom of the pan and roasted with some baby potatoes, about 1 and a half hours at 350 for a roast under two pounds. It got rave reviews.

Turkey and Quinoa Meatloaf

This was fantastic and it sliced up so nicely (I waited the ten minutes). I also did add some panko crumbs but next time I will try it without as mine was a little dry as a result. We really loved the recipe and will certainly be making it again. Thanks Drew.
