Bow-Ties & Shrimp in Spinach Pesto
Enclosed is a video that I created to go with the recipe set to music so that you can dance while watching the video and can start and stop the video as necessary to get the video right.
This recipe is made easier and simpler with the new Pasta Maker by
Tupperware so that your pasta is made in the microwave and strained in the same container it is cooked in and left over extra pasta is stored in the same container. How easy is that?
4 oz of Bow-tie Macaroni (unless you want more for extra recipes)
1 Pkg of Cooked, De-veined, Shrimp
1/2 pkg of Cherry Tomatoes cut into halves (save other half of pkg for a salad)
10 oz pkg of frozen chopped spinach cooked or fresh spinach chopped fine
3 cloves of garlic minced (I used minced garlic in olive oil in jar)
1/4 cup of walnuts (optional) I have made both ways due to company with allergies
1/4 cup packed fresh basil or 1tsp of ground basil
Add spinach, walnuts,basil and garlic to the chopper and mince.
I used the Pasta Maker and just placed the water in and the pasta then placed into the microwave at a power of 7 then set on a heat stone till I was ready to serve then stirred into the pan with the simmering mixture below.
Place 1 tsp of the olive oil in the frying pan and add the shrimp and cover to slowly heat. Add the chopper of ingredients and stir then allow to simmer. I can never stress enough to please cover when simmering as this keeps kitchen clean and burn free.
I left the water from the shrimp in which was enough to allow the Pesto to be a great consistency. Add the pasta and a small garden salad and you have a great meal.
