Healthy Zucchini Chips

Saw a similar recipe and used this one as a basic starter. I used avocado oil in place of the milk, added dry cilantro, basil, garlic powder, smoked paprika and of course some salt. The only bread crumbs I had were panko which worked but didn't stick well because they were too chunky. I just bought some seasoned bread crumbs to make more since these were gone in minutes...took them to a picnic and everyone that tried one had to have more, really yummy.

Chili Rellenos Casserole

Love this recipe, I hadn't made this dish for years but had vague memories of making it. I used an extra large loaf pan and the whole chili's worked great with their triangle shape when cut open and placed top to bottom. I also used a green enchilada sauce since it was on sale and never remembered having them with a red sauce. I also salted and peppered the eggs and just used the canned milk with the 3 eggs. I also used a little pepper jack cheese with the other cheeses and drizzled the green sauce on it between the layers also. Browning the top layer of cheese is a must. Sliced it like bread and drizzled more enchilada sauce on when reheating. Rave reviews and keeps getting better as leftovers.

Beer Bread I

I hadn't made beer bread for a while so I looked it up on this site. Same ol great bread but I subbed in about a half cup of ground (I use my coffee grinder) oatmeal to make it a little healthier. Yumm.
