Roasted Brussels Sprouts

Brussels sprouts have always been one of my favorite vegetables...but now this is the ONLY way I will ever make them. SO DELICIOUS. Sometimes I mix it up by adding a bit of minced garlic :)

Better Spanish Rice

This was very delicious. I forgot to add the cilantro (despite that being the reason I decided to make this in the first place) and it was still tasty. I used Rotel based on other reviews. Next time I will make sure to add the cilantro! I also may play around with adding cumin or habaneros to give another layer of flavor.

Kyle's Favorite Beef Stew

I thought this was amazing. I did make a few changes, but they are minor and are as follows: I only used 1.5 pounds of beef stew meat and made up for that by using one extra potato and a pound of frozen peas. I used medium white mushrooms quartered instead of the button mushrooms. Other than that I stuck to the recipe. I think that it was a little labor intensive where it probably doesn't need to be...I will probably be lazy next time I make it. All in all this is a very tasty dish and reheats well. For dinner last night I had two bowls of it followed by another bowl reheated right before bed. Today for lunch at work, i had a small bowl of it with some ciabatta bread for dipping. Very tasty...and I will definitely make this again.

Barbeque Seitan and Black Bean Burritos

I made this for my lab holiday party because one of my labmates is vegan and I wanted to make sure he had something to eat. These are so delicious! Even the hardcore meat-eaters complimented them. I personally didn't think they were spicy enough...but I've never worked with habaneros before and it's possible the two i picked weren't ripe? I picked the smallest ones because of the reviews of how spicy these were...I'll pick bigger peppers next time. And as others mentioned, I thinned the barbecue sauce before putting it on the bottom of the pan and on top of the burritos to make more of a glaze. After I removed the cup of sauce for the mixture, I added half a cup of water to the bottle and shook it up. Worked perfectly.

Chorizo and Lentil Stew

The flavor profile of this dish is very nice! I was a bit iffy on combining chorizo with Indian spices, but it turned out well. I wilted spinach into it at the end so I felt like I was being a bit healthier. The only reason I don't give it 5 stars is that it was soooo thin. Next time I make it, I will either decrease the liquid or increase the lentils.
