As per user suggestions, I sifted the onions out of the mix to avoid the burnt onion problem and added a few more potatoes instead of decreasing oil. I also added 1/2 tsp. each of oregano and garlic powder, and a pinch of pepper and garlic & herb seasoning (salt substitute/salad seasoning.) I quartered the potatoes instead of halved, and cooked them at 350 for 45 minutes and then broiled them (on the second to highest rack) at 450 for 15 minutes. I also took them out halfway through and turned them. They were excellent, but the oil was still too much, and really kept the seasonings from staying on the potatoes. Next time, I will add half the amount of oil, but I will keep everything else the same. Sounds complicated, but this was a really basic recipe that, when altered to your personal tastes, is easy and delicious.
