Roasted and Curried Butternut Squash Soup

I didn't have to tweak this recipe very much, and it was SO GOOD. I did do some things differently because I didn't have oregano - I used 1 tsp. pizza seasoning. Also, I used another reviewer's advice and added 1/4 cup coconut milk in place of the brown sugar, although NOT in place of the plain yogurt. I didn't put in 6 cups of veggie broth, I actually slowly added enough until it was to MY desired soupiness. I did double the curry and added 1 tsp red pepper flakes because I need the heat. I garnished with CILANTRO, because it's so much more fitting and compliments this soup better than parsley. I have three male roommates, two who took the leftovers to work today, and one who said this was the best soup he's ever had.

Pumpkin Bread

Just like the others - increased amt. of cinammon, decrease cloves & add 1/2 tsp. salt. This was SO GOOD. I just made it yesterday for Christmas morning and somehow both loaves have been completely devoured by my family through the night.

This recipe sounded SO good, but there wasn't enough flavor. It was very bland. It didn't taste BAD, but it sure didn't leave any impression.

Oven Roasted Red Potatoes

As per user suggestions, I sifted the onions out of the mix to avoid the burnt onion problem and added a few more potatoes instead of decreasing oil. I also added 1/2 tsp. each of oregano and garlic powder, and a pinch of pepper and garlic & herb seasoning (salt substitute/salad seasoning.) I quartered the potatoes instead of halved, and cooked them at 350 for 45 minutes and then broiled them (on the second to highest rack) at 450 for 15 minutes. I also took them out halfway through and turned them. They were excellent, but the oil was still too much, and really kept the seasonings from staying on the potatoes. Next time, I will add half the amount of oil, but I will keep everything else the same. Sounds complicated, but this was a really basic recipe that, when altered to your personal tastes, is easy and delicious.

Focaccia Bread

My friends and family LOVE this bread. I have made this focaccia bread three times since first finding this recipe, and I plan to continue using it. The dough needs to rise longer than 20 minutes, though, and I increased the garlic by 1/2 tsp and added 1 tsp rosemary to the dry mixture. Next time I will try dissolving the yeast in part of the water to see if that helps hasten the rising process. Thanks for a great recipe!
