Balsamic Roasted Pork Loin

Wasn't sure if it was going to be too overpowered by the balsamic vinegar, but it's amazing! Other than changing the size of the roast because it was a huge crowd I was feeding, I had to triple the recipe but followed it to a T and it turned out fabulous. I used McCormick's no salt added Montreal Steak Spice. Thanks, Melissa S.

Layered Taco Dip

I used to make this all the time, and am happy that I found the recipe again. Will also add cooked ground beef to the creamy mixture. Yum-O!

Pumpkin Pancakes

OMG!!!! Absolutely amazing!!! Best pancakes I ever made. I only did one tweak, by changing only one cup of the all purpose flour for whole wheat flour. I always do that for my family's fibre intake. Kudos to Ruth! I used canned pumpkin purée. This will be my new pancake recipe, and if I can figure it out, make them into crepes and stuff with prosciutto, cheddar cheese and asparagus. Probably try them for Christmas morning breakfast for the family.

Mushroom Sausage Strata

Great start for the recipe but I really changed it up to boost the flavour. I made this for Mother's day brunch but I did alter the recipe quite a bit. Instead of canned mushrooms, I used fresh and sauteed them with about 1/4 cup of chopped onion and 1 tbsp butter. I substituted the bread for mini croissants and instead of Worcestershire I used a tbsp of grainy Dijon mustard. It was gone by the end of the brunch so it must have been loved.

Incredibly Cheesy Turkey Meatloaf

I'm going to try this with oats instead of bread crumbs and add some Italian seasoning. My husband cannot eat bread in anyway so it will be easier for him to digest.

Easy Garlic Ginger Chicken

For a great low carb meal, I made some sauteed onions, mushrooms and bean sprouts with soya sauce. The chicken was super moist and tasty. I was worried that it might be too much ginger taste but it wasn't. My husband even says it's a meal to repeat often.

Pork Chops with Dill Pickle Marinade

Amazing! I never would have thought this would be so good. Even my extremely picky husband could not say enough about it. Of course, I waited til after he tried it to tell him what it was. I never have any store bought pickles so I used my homemade dill pickle juice and it was fabulous.
