Strawberry Cheesecake Bites
Ok. I made this a little easier for myself, but this turned out so good, I have to share it for other busy ladies like me. I took 15 mini pre-made phyllo cups(rather than cutting into strawberries) and filled them with a small tablespoon sized scoop(I use it for cookie dough)of the cream cheese filling (rather than piping it). I then halved strawberries and placed a half on each cheesecake bite. Lastly, I sprinkled mini chocolate chips over them (rather than making a chocolate drizzle). This was pretty, yummy, and fast. My husband and toddler ate the entire batch!

Spinach and Strawberry Salad
I figured it out! Wash and cut and slice strawberries first. Then mix up the dressing and set aside. I used honey instead of sugar. Wash the spinach gently and shake off excess water. Spin any additional water off in a salad spinner. Then carefully mix the strawberries and spinach together in the salad spinner. Add just the amount of dressing you think that you will need to moisten the salad. Then spin the strawberries and spinach again in the salad spinner to shake off any unneeded dressing. Add poppy seeds, sesasme seeds and almonds and toss. The salad will NOT be soggy and because you likely will not use all of the dressing, it will not be overly sweet!
