Cream Cheese Frosting II

Based on other reviews I decided to reduce the cream cheese to 1 1/2 packages. I left everything else the same. Perfect! As another reviewer stated, you could eat it by the spoonful!

Quinoa and Black Beans

I added 2 small fresh chopped tomatoes and 1/2 of a zucchini, chopped, at the same time I put in the corn. I omitted the cayenne pepper and only used one can of beans. This dish was the meal, no side dishes necessary! It was FABULOUS!!!

Easiest Peanut Butter Fudge

I made the recipe with a scant 2 cups brown sugar, 1 heaping cup of peanut butter, and 3 scant cups powdered sugar. I don't like dry, crumbly fudge so I didn't put it in the refrigerator. A day later it is still soft and creamy, with texture and taste just like the fudge in Mackinac! AWESOME!
