Mexican Lasagna - No Lasagna Noodles!

It was easy and popular with the taste testers in our family. I found it to be just average in taste but you can't beat the simplicity of preparation here! All in all, a good simplistic recipe for a family meal.

Hearty Vegetable Salad

My family found this salad to be "okay"- perhaps some of it was the difficulty of finding enoki mushrooms and having to substitute. The worst problem was having no recipe for the salad dressing we are told to use. The test says "recipe below" but there was nothing, and a search produces no salad dressing recipe by this author or anything even similar. Perhaps, if the actual dressing was included, this might have had a better rating from my taste testers.

Sylvia's Ribs

By far THE best ribs I've ever made, bar none. Simple, fall-off-the-bone tender and extremely flavorful. I had doubled the sauce, as another reviewer suggested, but I honestly didn't need extra at all. Just follow the recipe and you will have perfection! Thanks Sylvia!!

Spinach Cheese Ball

It makes a beautiful presentation but you can mold almost any cheese into this shape and decorate accordingly. What's wrong with it? Nothing really- and that is the problem. It was so bland and tasteless that no one wanted to eat it, even though they were initially excited by how beautiful it looked. I suggest either finding a way to flavor up this recipe or, more easily, just take a different one and mold it as this picture presents. I used pine nuts as one type of ornament and had to purchase a small plastic star for the top because none of the yellow food items I had would hold together. Perhaps a brick form of some yellow cheese, cut into a small star, would work?

Hot Spiced Cranberry Cider

A total hit with my guests, so much so that they came back again and again and emptied my supply before expected! I also suggest putting the lemon slices in as you are serving it to prevent a bitter aftertaste. Perfect and so easy to make- and no changes needed!

Cherry Nut Cake I

This was one of the driest and most "condensed" cakes I have ever made- it was the equivalent of a gluten-free cake but without any flavor. The cherries and the nuts were overwhelmed by the density of the cake- I would never recommend this to anyone.

Tangy Honey Glazed Ham

The orange and cloves overwhelmed the rest of the ingredients so this wasn't a big hit with anyone. That being said, if you played with the recipe a little, it would probably be decent- you also have to be sure to use a pre-spiral sliced ham so you can get the glaze onto each slice. I'm just not sure if I would put the effort into this when there are so many other excellent recipes around.

Broken Glass Cake

This just wasn't a seller with my family or the company we had over. The jello was pretty but, for the labor involved, the results were disappointing. I would save my efforts for something different than this.

Foolproof Rib Roast

Yes, it tasted good- but I'm still concerned with the idea of leaving meat sitting out without refrigeration. That being said, the roast timed out as indicated and that is always a huge plus. Be sure to use a meat thermometer so you get it exactly rare/medium/etc.

The Best Meatloaf

Easy to make and my family just raved over it! I added a little extra Heinz 57 and I halved the amount of the soft bread crumbs, substituting dried ones for the remaining half. Great recipe!

Chicken Enchiladas I

This is excellent using chicken or ground beef, which is great for varied tastes. Adding salsa instead of tomato sauce, chilis instead of green pepper and red enchilada sauce instead of taco sauce really added to the flavor. My guests loved it and asked when I was going to make it again!

Apple Brine for Turkey the Night Before Cooking

It works, wonderfully, for making your meat moist and tender. I found there were no Ziploc bags that would handle a 20 pound turkey plus brine so I used a garbage bag. I am a germaphobe but I saw no reason to be concerned about the plastic and it worked wonderfully well in a cooler.

Homestyle Turkey, the Michigander Way

Excellent flavor- I brined mine the night before and then doubled the ingredients for my 20 pound bird. You should definitely skip any salt if it has been brined- then you will get some excellent turkey broth to make gravy out of. I baked mine for 1 hour at 375 and then 5 hours at 350- adjust according to size of bird. Never needed any basting, just plopped it in the oven and a beautiful bird appeared when it was done!

Hot Crab Dip

Not bad, not good, just kind of bland. Bright side? You won't offend any guests who don't care for seafood because there is almost no taste. Down side? Those who love crab will probably not be impressed and, with the expense of crab meat, you want this to be excellent.

Famous No Coffee Pumpkin Latte

Either you love this or you hate this, there doesn't seem to be any in-between. I had some guests who asked for seconds and other's who politely left it in their cups after tasting it. I found it to contain a mildly bitter aftertaste and a grainy texture. I would not take a chance on serving this unless you have tried it before-hand; and realize that you will have people who won't care for it at all.

Cheddar Ranch Dip

The telling part of this recipe is my guests couldn't tell what it was! The ranch dressing overpowered all the other tastes and it was almost impossible to tell there was bacon in it. The shredded cheese made for an unappetizing texture with no taste to be gained. Conversely, my guests ate it and said it was good- they just thought it was ranch dip.
