Downeast Maine Pumpkin Bread

There was nothing wrong with it and everyone ate it... but there were comments about a lack of spicing and moisture. I believe making two loaves from this, as opposed to three, would help with dryness. We just found it somewhat bland and I wouldn't put the work into it for this particular quality. Sorry- usually I'm right on board with the majority rating but I can't do it this time!

Spanish Rice Bake

Excellent recipe! I actually used 2 cups of chili sauce as it made the rice slightly moister (this was after I had doubled the recipe so it would fill a 13x9 pan). I also put 2 cups of cheddar cheese on top and it was very tasty. Not only did everyone love it but there were absolutely no leftovers- and this was substantially more than I would have ever expected them to consume!

Kid-Pleasing Sloppy Joes

Very sweet and tangy at the same time. It was very popular with my family! If you want something a little less sweet, I would just adjust the sugar quantity down- this works well with cole slaw on top.

Easy Apple Avocado Salad

This salad was a lot of effort for little return. There was nothing "wrong" with it but it definitely needed more taste and the avocado, apple combination is fine if everyone loves avocados; I noticed it did not go over well with those who weren't passionate about them! The look was not very appealing either- it looked brown and somewhat "dirty" from the cinnamon and the apples starting to turn color.

Hawaiian Pineapple Chicken

Excellent flavor and super-easy to make! Just be sure you give the chicken enough cooking time- I increased the oven temperature to 350 and still had to cook it 10 more minutes than was called for in the recipe. The sauce is wonderful and subtle, the chicken was moist and tender- served with coconut rice, it is unbeatable!

Peach Cheesecake

Oh my gosh... I can't possibly say enough good things about this recipe!! Easy to make, every human who has tried it loves it, and we now have to double the recipe just to get a small portion ourselves! This is terrific for home, pot-lucks, anywhere at any time. We actually made this two days in a row because we couldn't get enough! :)

To Die For Fettuccine Alfredo

VERY popular with most of my guests and relatively easy, very fast to make. The people who did not care for it as much (including myself) are used to thicker sauce with more of it. All in all, if you like the original Alfredo (yes, I'm old enough to have had him mix my pasta at the table in Italy!) this is the one. If you want a stronger flavor and a thicker consistency, you need to look elsewhere.

Famous Meatballs

Great flavor but you should be careful not to overcook them (I found 1 hour was plenty). The sauce needs to be doubled if you want any on the rice- otherwise, it just barely coats the meatballs. That being said, I heard many times how much my family loved the taste.

The Best Rolled Sugar Cookies

They taste good and they roll out nicely. The problem I had was they were simply too soft for my taste and, when being told that decorations had to stay off until after cooking, you can not place any on them as far as sugar and sprinkles once they are done. The next batch I placed decorations in before cooking and they melted, making some cookies look like versions of Frankenstein! Some complained of acid indigestion after eating them but I really don't see how that's possible. Long story short, if you like soft cookies and you plan on icing them, this would be the way to go. Other types of decorations, or those who like a crunchier cookie, you might want to look elsewhere.

Herb and Garlic Roast Tenderloin with Creamy Horseradish Sauce

I wish I had read the most recent review because it was completely accurate. I went by the cooking temperature and timeline in the recipe and it wasn't even close to what the reality was! I ended up with more than a hour's extra cook time, in addition to raising the temperature in my oven, and all my finely honed timing for Christmas dinner went right out the window- while the roast tasted very good, I'm sure I could have found another recipe to equal the taste and one that wouldn't be so problematic. My suggestion is you shop around- this simply wasn't worth the hassle.

Easy Turkey Gravy

It IS easy and part of it can be made the night before. What I found lacking was flavor! I had to add chicken bouillon and had to thicken it far more than the recipe suggests. Easy? You bet! Can you do better? Absolutely-

Grandma's Green Bean Casserole
