Chantal's New York Cheesecake

My three-star rating includes the four-star taste and the two-star tips from reviewers I chose to listen to. With every recipe I read the reviews first to pick up tips from others who had more success adding ingredients/steps/etc. I decided to use the following tips all to hopefully stop the dreaded cracking of the cake: "lower the oven temp to 325," "grease around the sides of the pan to the top to help prevent the cake from adhering to the walls," "mix everything by hand until just incorporated," and "use a water bath or a pan full of water underneath the cake." Well, after taking these precautions, a half hour into the bake and I had a HUGE crack down the middle. Very disappointing. I liked the taste of this uber-traditional cheesecake, but I think next time I make this; I'll forego the safeguards from other reviewers and follow the recipe without worrying about cracks. A crack does not affect the taste, but the useless tips wasted my time and dirtied more dishes. By the way, I made a vanilla mango sauce for the top and it was fantastic.

Broccoli and Tortellini Salad

This recipes makes a TON! Perfect for tailgating with a crowd or a family reunion. I usually make 1/2 or 1/3 the recipe...but I keep the bacon - yum! Thanks AFMC for adding tortellini to my favorite salad!

Spaghetti with Fennel and Shrimp

I just made this last night (02/01/06) for two of my biggest critics (the spouse and the father-in-law). First, I was trepedacious about the fennel (my spouse picked it up at the grocery thinking it was a leek). So, I chanced upon this recipe. Let me tell you, I thout the fennel was going to be pungent, but it ended up complimenting the dish perfectly. I used my own marinara sauce, but man was it good! My two bigest critics kept quiet the whole meal because their faces were too full to speak! It doe make quite a bit, so there will be leftovers unless served to a crowd.

Chocolate Truffle Cookies

I, too, used a 2 tbsp scoop for these delicious cookies (12-13 min does the trick). To make them a little sweeter, I used Ghirardelli Sweet Ground Chocolate & Cocoa instead of plain old unsweetened cocoa. Made a big difference. I'm also thinking of using peanut butter chips next time.
