Golden Apple Potato Salad

I used far more vegetables to dressing than this recipe calls for, but the dressing itself was quite tasty and the apples were a nice touch. I also added fresh parsley.

Peaches and Cream Cookies

These rose well and had a nice texture, but they were surprisingly tasteless--no peach flavour (and that was with more peach than called for by the recipe), just sweet bland dough. I would suggest adding cinnamon or some other spice, or perhaps peach extract.

Pesto Cream Sauce

We added frozen spinach, left out the mushrooms, cut the butter to a third, and had to replace the romano with nasty bland cheddar (all we had in the house)--the sauce was still very good, though it definitely wanted the bite of a sharper cheese.

Rhubarb and Strawberry Pie

I used finely chopped raw rhubarb, halved frozen strawberries, and 3/4 cup sugar--it's a delicious pie! It's not necessary, by the way, to cook the rhubarb before baking it. I poured away about a cup of juice after marinating the fruit--this kept the pie from being runny. (I cooked the juice in a saucepan later to make a single serving of excellent pudding!)

Persimmon Pudding

Very tasty and simple. I used 2 cups of milk and 2 cups of sugar and threw in some more spices and two aging nectarines. The final product has a great texture and good, rich taste, but it is too sweet--it probably just needs to be served with some yoghurt, cream, ice cream, or meringue.
