About this Cook
I was a stay at home Dad to twin boys for 10 years although I owned a catering company, the majority of my time has been spent with my boys and volunteering at their school. I have recently started teaching cooking classes. www.treschiccookingclasses.com I enjoy sharing and teaching my passion for cooking. Two years ago after multiple health problems I adopted the Paleo style of eating. (Meat, Vegetables, fruit, buts and seeds. No Dairy, Legumes, grains, or potatoes) since I adopted this lifestyle, my health problems have disappeared and I have lost and maintained a 60 lb. weight-loss. Of course being a chef and teaching cooking classes I am flexible and try to eat Paleo about 80% of the time.
My favorite things to cook
I love beef. My family raised beef, so I grew up on it. I also love in season fruits and vegetables and finding new ways to cook them. If I had to say what my favorite thing to cook is, it would be soups. They are so satisfying and can be simple and filling, or complex and rich. It is therapeutic for me to make all of my own stocks.
My favorite family cooking traditions
My Mom and Grandma taught me to make everything from scratch. There were never boxed, canned or frozen dinners at our house. I have continued this practice with my own family.
My cooking triumphs
I have had many of my recipes win contests, which is always satisfying.
My cooking tragedies
I was having an outside dinner party for 12 on a chilly fall evening and I had made Korean BBQ. I transferred the meat to a platter that I had heated to keep the meat warm. I took the platter outside and it hit the cold air and shattered. Thank heavens for pizza delivery! (Although pizza doesn't go very well with cabbage kimchi)

California Roll Salad
This is very good. I added Nori as others have suggested, and I also added about a tablespoon of pickled ginger cut into thin slivers.

Hamburger Steak with Onions and Gravy
I made this recipe as written except thankfully I took the advice of another reviewer and doubled the gravy. This is a hearty, flavorful and delicious dinner. It is what we call in my family, " a do-over".

Sweet Dinner Rolls
These could not have been any easier. The only problem was that I didn't make enough. Next time I will double the recipe. I brushed the tops of mine with honey butter straight out of the oven and my guests loved them. I can't wait to try them as orange rolls.
