As my user name suggests, I'm a vegetarian. I've very much just began cooking and coming off a diet of microwave meals and junk. I want to be able to cook delicious meatless meals for myself, as well as meaty meals for my omnivorous family and boyfriend!
My favorite things to cook
I love cooking any Mexican, Indian, Asian, or Middle Eastern dishes. I'm also not so awful at baking!

Vegetarian Chickpea Sandwich Filling
Yum! I can't resist a good chickpea recipe and this is definitely a good one! You can really customize it any ol' way you want. I left out the celery, and added some cumin, mm mm mmh!

Creamy Chicken
My family adores this dish. It's so simple, yet flavorful. I ended up cutting the chicken breasts into bite-sized pieces and using a bit more cream of chicken soup than the recipe called for. I also added some veggies and served over rice. My parents were so impressed!

Mock Tuna Salad
Not quite like tuna salad, but still so delicious! I made a few adjustments to suit my own tastes (left out the relish, added some Sriracha sauce), but all in all, it was great. I would suggest that one uses a food processor or a potato masher to mash the chickpeas. I tried it with a fork at first (silly me!) and, boy, was that tough!
