Chile Verde II

This was fantastic! The flavors were wonderful and the meat was very tender. I did cook it a little longer on the 2nd simmer just to get all the peppers nice and soft. Thank you!

Slow-Cooked Country Ribs in Gravy

These were absolutely wonderful. The aroma in the house while they were cooking drove DH nuts- he would walk over to the crock pot and take big, deep breaths. I thickened the liquid with a cornstarch mix and it made wonderful gravy for the mashed potatoes we had with it. Thank you!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

The Tilapia was wonderful. I just made this again for the 4th time. I found the directions for the honey cumin sauce and put it on the fish as soon as I took it out of the pan. FANTASTIC! We love the tilapia done this way. Thanks!

London Broil

This was very good- wonderful flavors for summer. I marinated mine for 7 hours in the fridge, then let it come to room temperature for an hour before patting it dry and adding the dry rub. The only deviation from the recipe was that I doubled it to accommodate a 3lb. london broil. Delicious! Thank you.

Blue Cheese Burgers

I don't normally like to mess with recipes until I try them exactly as is, but.... I added about 1/2 cup of the real bacon bits and then topped the finished burgers with avocado slices. These were really, really good.

Marinated Flank Steak

This was very tasty. We grilled a 4 lb. steak (I doubled the marinade)with walnut chips for added flavor. Delicious! DH even complemented that he loved the marinade.

Festival Chicken

We used the glaze on a 3.5lb boneless pork loin roast. I baked the roast at 325 for 1 1/2 hours, basted, then baked until it reached 160 degrees. I let it rest for 10 minutes. Delicious! Thank you!

Chicken Enchilada Soup III

Cheddar Bacon Hamburgers

Beef Stew II

This is the first time I made Beef Stew that hubby actually complemented me on. I added about 8 quartered baby rose potatoes to the pot and used 2 cups beef broth instead of water. The sauce was outstanding!!! A definite keeper.

Bacon Roasted Chicken

This was very good-not too greasy. I forgot to rub with butter before applying the bacon. When I removed the bacon, I rubbed with butter to let it brown. Everyone enjoyed it. The breast meat was very juicy!

Split Pea and Ham Soup I

This was fantastic! I added some chopped carrots. Didn't have a ham bone, but had plenty of left over ham that I diced and put in there. Also, I used 2 cans of chicken broth and then added water as needed. Thanks for the great recipe!
