Baked Potato Skins

These were fantastic and the most sought after items at the Super Bowl party. Very flavorul. Just as good if not better than one of our local chain restaurants'. Thanks for a great recipe!

Garlic Cheese Bread

We made this twice now in the past 2 days. The first day I used bolillos- soft rolls. They were very tasty but DH said that he wanted crisper bread. The 2nd time I used a crusty french bread and toasted it. DH said it was perfect (and he's not a real bread fan) I used approximate proportions and it only made enough for half a french loaf. I liked them both ways- very tasty. Thank you!

Flatlander Chili

I made this with one addition- about 2 TBS of chopped pickled jalapeno for added zing. FABULOUS! DH and I loved it. It didn't have the overpowering chili powder taste. Oh, and I thickened it up a bit with some masa flour as was previously suggested. Thanks for our new favorite chili!!!!

Tasty Tuna Burgers

These were so good that DH actually said that I could add this to the rotation! I did make a few adjustments, though. No celery on hand, so I added a dash of celery salt. I used 2 cans of albacore tuna and had to add a little more bread crumbs to the mixture. I didn't have any chili sauce, so I added a dash of cayenne pepper. I accidentally left out the dill, too. Before sauteeing the patties in butter and olive oil, I dipped them in plain bread crumbs that I seasoned with cracked pepper and a dash of cayenne. We ate the patties without the buns and "burger" fixings and I served sauteed zucchini with it. THANK YOU FOR THE WONDERFUL BASIS FOR THIS GREAT RECIPE!! This tuna filling would make wonderful tuna melts, too!!!

Buffalo Chicken Dip

I halved this recipe and used chopped cooked chicken breast instead of canned (didn't have any canned chicken). I used the 1/3 less fat cream cheese and 2% milk cheddar cheese to help lighten the cholesterol. Put the ingredients in my little 1.5q crock pot and let it heat up for half an hour or so. GREAT snack with Frito's scoops and tortilla chips (we also had it with celery sticks). This will be on the game day menu again!

Honey Baked Chicken II

I followed other reviewer suggestions and only used 1/4 cup melted butter and then used 1 1/2 tsps curry powder. (We had all chicken thighs) What a great dish!! DH ate 3 pieces and then finished off the chicken for lunch the next day- he doesn't do that! I will definitely be making this in our normal rotation and will send the recipe to my daughter!

Flank Steak Pinwheels

This was excellent! I marinated the steak in the morning and cooked it for dinner- YUM! The meat was very tender and flavorful. I had never cooked with Feta cheese before and had quite the dilema at the deli counter choosing- ended up with Greek Feta because they said it was very mild. Thank you for this wonderful recipe!

Tuna Noodle Casserole II

After reading a few of the reviews, I made this wonderful, wonderful dish! I ended up using an 8 ounce package of egg noodles, 2 cans of tuna, 1/4 cup chopped onion and the whole can of 2%evaporated milk ( and the healthy request mushroom soup). I also put in about a cup and a half of frozen peas and used 2 cups of shredded 2% milk cheddar cheese. DH and stepson absolutely RAVED about this! I was even told that this could go into the bi-weekly rotation! Now that's a HUGE compliment!!!!! Thank you!

Beef Stroganoff III

I followed a few other reviews and marinated the beef for an hour in cabernet wine (omitted the wine at the end), then used yellow onion instead of green, fresh mushrooms and a dab of cream cheese at the end. Delicious!!!

Apple Cranberry Stuffed Pork Chops

These were wonderful. I will cook mine a little less next time (they were a bit dried out, but I think that was my fault) The taste was fantastic- I added the extra stuffing to the pan during the roasting time and then used whatever fell out of the chops in the sauce, too! Even DH who doesn't like pork really liked them. This was an easy to follow recipe that didn't require a gourmet store shopping trip, yet it's special enough to serve to guests. Thank you!

Apple Butter Pork Loin

I made this with a 4 pound pork loin and it came out absolutely fantastic! The meat was very flavorful and moist! I only baked it for an hour after I put the apple butter on it for a total of 2 hours. I also had the oven set to 325 instead of 350. This is a definite keeper!

Aunt Gail's Oatmeal Lace Cookies

These were very, very buttery and very tasty. I decided to coat the bottoms of a few of them with melted chocolate. I melted some milk chocolate chocolate chips in a double boiler and took a teaspoon of chocolate and spread it on the bottom of the cookie- they were too fragile to dip. Great concept, bad execution- the chocolate didn't set up. DH (the cookie eater in the house) liked them both ways, though! Thanks for the great recipe!

Macadamia Nut Crusted Tilapia

I made this last night following the suggestions to bake at 400 degrees. I followed the ingredients blend exactly. It was absolutely delicious! DH even asked for another piece, something that he seldom does with fish. Thank you for a wonderful recipe that will remain on our list!

Lori's Spicy Chipotle Lasagna

This was excellent! I didn't have chipotle chilis, just the sauce that they came in. I put in almost 2 TBS and it still wasn't very spicy, but it gave a wonderful flavor. The zucchini was a total hit with the family. I didn't have any sliced mozzarella so I used provolone instead. For some reason, I can't get the 3rd layer into the pan, so I only had two layers. The entire dish was a huge success. Thank you!

Mexican Chicken Kiev

This turned out great even though I couldn't get the huge breasts pounded out thin without tearing them. I followed a suggestion and just used a whole chile and stuffed it with the cheese "log". I wanted to keep it somewhat healthy, so I sprayed the chicken with butter flavored Pam instead of drizzling with butter. Also, I ran out of time so I only refrigerated the breasts while the oven heated. The chicken was moist and delicious! A tiny bit of the cheese oozed out, but it was great, too! Thank you for a wonderful dish@

Candied Yams

This was so tasty that my husband, not a big fan of yams, loved it! I followed a suggestion and sprinkled a little cinnamon on the drained and mashed yams and then I mixed the brown sugar and butter bits in with the yams. I didn't have an oven available to cook this at 400, so I put it in the 350 oven for about 35 minutes (the marshmallows just turned golden). Fantastic and easy! Thank you!!!

Terrific Turkey Meat Loaf

This was terrific! DH (a non-poultry fan) loved it, too!!! A few changes because of our tastes and what we had on hand: I subbed Italian bread crumbs for the oat bran (didn't have any). Left out the olives because we don't really like olives. The meat loaf came out tender and very flavorgul. Thank you!!!

Jalapeno Chicken

I only had chicken breasts (boneless, skinless) and followed a rater's review that the chicken was sauteed in some butter and the sauce was added to the covered pan. It was very, very moist chicken and very flavorful. DH and I concluded that we like the seasonings and spice, but next time we will cut the cinnamon from 2 teaspoons down to 1 (neither of us really like that strong of a cinnamon taste). Great recipe! Thanks!

Smokin' Scovilles Turkey Chili

I made this tonight and the only change was that I didn't put the hot sauce in at the end. I got rave reviews from DH and stepson. What a great flavor this had and yes, it was spicy, but it was tasty! Thank you for a great turkey chili!!!!!
