Texas-Style Baked Beans

Reviewed: Jun. 18, 2004
I have made these numerous times and each time I do, I love them more. Instead of putting in just hamburger, I brown a pound of Jimmy Dean Smokehouse sausage. Makes it marvelous! Also, I drain a couple of cans of those beans, otherwise they are really soupy.

Irish Cream Bundt Cake

Reviewed: May 6, 2004
I made this for some relatives that were in town for a funeral and it was a big hit. One of the men NEVER eats dessert, he had 3 pieces before the evening was out, that should tell you how good this is. I did make one substitution. I didn't have any vanilla instant pudding, so I used cheesecake instant pudding, plus I had to bake mine a little longer than 60 minutes. One word of caution. BE SURE YOU GREASE AND FLOUR YOUR CAKE PAN INSTEAD OF USING THE COOKING SPRAY. I used the cooking spray and mine stuck to the pan in a couple of places. I just got it out and put it together anyway.

Cajun Seafood Pasta

Reviewed: Apr. 28, 2004
EXCELLENT RECIPE!! I tripled the recipe plus added a bit more cheese than called for to make it a little thicker (I also used shredded mozarella). Once I tripled it, it served 7 with a little bit left. Heat was just right for everyone but my husband who sweats when he eats catsup. THIS IS THE BEST! I used garlic and herb fettucine instead of just the plain kind and it really complimented the sauce!!

Irish Whiskey Cake

Reviewed: Apr. 12, 2004
Made this cake yesterday and was not impressed. The batter wa as thick as cookie dough and it was a very dry cake. Had to bake longer because it was so thick. I had thought of using a bigger pan when I was preparing this, but after making it, I have just decided not to make again.

North Carolina-Style Pulled Pork

Reviewed: Mar. 29, 2004
When I first read this recipe, I almost decided not to make it and then I read the comments. I'm not a big vinegar fan and neither is my husband (anything with vinegar in it makes him sweat!!) But i decided what the heck and broke down and made it this weekend (there's only two of us - should have invited all the kids over as it made a BUNCH!) I did cut down on the vinegar as other viewers noted and also on the red pepper flakes. It is a very good recipe and my husband will have stuff made for his lunch all week (which he said he would be glad to take) I was looking for something differenct to fix and this fit the bill. One word of caution - I cooked it in my oven at 250 for 6 hours and it could have used about 2 more hours of cooking time to make it fall off the bone as other reviewers noted.

Tropical Lime Cake

Reviewed: Feb. 10, 2004
Made this for my husband to take to work. It was devoured way before lunch and everybody wanted the recipe. I can't eat it because I'm on the low carb diet, but from all reports, this will be a permanent addition to my dessert file. My husband usually prefers pies over cakes, but he said to make this as often as I can. I fixed a frosting for it with only 1 tub of cool-whip and a small box of lime jello mixed together and spread over the cooled cake. WONDERFUL!!!!!!!

Chili I

Reviewed: Feb. 4, 2004
I was a little apprehensive about making this chili because of the ingredients, and after I made it, I had to do some tweaking because we don't like sweet chili. I added 2 capfuls of liquid smoke, and about 6 shakes of worchestershire sauce. Next time I will not add the brown sugar at all. Instead of using tomato paste as called for in the recipe, I used 2 can of chili diced tomatoes and no beef broth. I figured if it needed it when I got through, I could add it then. I also only added 2 cans of kidney beans and that seemed to be plenty. I only rated this 3 stars because of all th adjustments I had to do, but overall, it was pretty good. Trying it on hubby tonight.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Feb. 4, 2004
this is the absolute best chocolate chip cookie I have ever made! My daughter ravved and raved about these cookies and so did my husband's co-workers. I didn't have enough vanilla pudding, so I used 1 box of vanilla and 1 box white chocolate. I had to bake them a little longer than called for (total time about 20 minutes). I don't know if that was because I used more cookie dough or what, but I still ended up with 6 dozen. All I can say is, THANK YOU, THANK YOY, THANK YOU . And to everyone reading this review, MAKE THESE COOKIES!!!! You won't be sorry!!!!!

Pecan Pie Cake III

Reviewed: Jan. 21, 2004
I was really excited about making this cake. What a disappointment! A lot of work for just a mediocre cake. It didn't taste like a pecan pie to me and it wasn't as moist as it needed to be. The best thing about it was the frosting. I hate to give bad reviews, but will not make this cake again!

Hot Clam Dip II

Reviewed: Jan. 7, 2004
I made this for a New Year's Eve party at my boss's house. When he asked me what I was bringing, he was like not thrilled with the idea. Boy did he change his mind after I brought it. There was no dip left, but plenty of everything else that everybody else had brought. Personally, I will be making this for all parties from now on. This is an exceptional dip and the presentation is great!

Lasagna Alfredo Roll Ups

Reviewed: Dec. 17, 2003
I made this last weekend for supper for my husband and I. Weboth thought it was great! Not something that we would want each week, but it was SO GOOD for a change. Would be great for company. The only thing I learned was to use a paper towel to dry all the moisture off the noodles before trying to roll up as it makes it much easier. I also added chopped chicken, but the next time I will boil my chicken breast and shred it very fine and it will be much easier to not only roll up, but to eat!

Hot Corn

Reviewed: Nov. 26, 2003
This is very good corn recipe. I made it for the first time in October for a family gathering and it was a big hit for those that liked really hot things. However, for my husband and I, it's a little too hot. I'm making it again for Thanksgiving, but I'm decreasing the amount of jalapenos.

Holiday Cheese Spread

Reviewed: Oct. 6, 2003
PLEASE DISREGARD THE NEGATIVE COMMENTS AND LOW RATINGS ON THIS RECIPE!! I made this over the weekend for a football party that had 22 people at it and asked them to rate it from a 1 to 5. EVERYBODY rated this a 5 and most of them said they would give it a 10 if they could. We tried it on crackers, all kinds of veggies (Beleive me, they weren't picky!) and when I had ran out of all the veggies, they were scooping it out by the spoonfuls and eating it right out of their spoon. It wasn't strictly all men either. By the time the evening had ended, everybody had asked me why I hadn't made a double batch. I didn't change a thing when I made this recipe and I won't in the future either!

Fajita Marinade I

Reviewed: Sep. 8, 2003
this is a wonderful marinade. I did do a little tweaking to it. I substituted worchestershire sauce for the soy sauce simply because we don't care for soy sauce. I also added 2 tsp of liquid smoke, 1/2 tsp each of onion powder and cumin. I used a round steak and it was VERY tender, which surprised me. I did not think there was too much lime juice either, maybe the worchestershire sauce conteracted it, but it was very good! I am going to try and marinate some rib eyes and brisket in this and see how they do!

Pico de Gallo Chicken Quesadillas

Reviewed: Sep. 4, 2003
I absolutely ADORE quesadillas, but I have never fixed them before. Tried this recipe and I'm hooked! I'd fix them every day if I could. Fixed them in a skillet on top of the stove, but I wish I had a quesadilla machine. I had a little bit of a hard time turning it, but then I'm not the most graceful person in the world either! To anyone viewing this recipe, all I can say is FIX THESE, THEY'RE FANTASTIC!

Buttermilk Cinnamon Rolls

Reviewed: Sep. 2, 2003
OMYGOSH!!!!! Tried this recipe yesterday and it is THE BEST recipe for cinnamon rolls that I have ever made! And so easy! My husband devoured 3 of them fresh out of the oven and when I offered one to my son-in-law, he told him he couldn't have any because he wanted them all! The only thing different I did, was I added 1/2 c. sugar to the buttermilk while I was warming it and I added raisins before rolling them up and cutting them. My mouth is watering just thinking about them. They're so easy, a person could make a batch every evening if they wanted to!
