Strawberry Vanilla Pancakes

Impressive. I did reduce the salt and Vanilla by 1/2 but other than that left everything else alone. Tasted great. Yes the batter is runny, but so what, they cook up fine and the end result is a full pancake. In fact I'm now thinking the thin batter is what keeps them light and fluffy.

My Crab Cakes

Excellent with one exception: Cayenne needs adjusting. I reduced the cayenne pepper to just under a 1/2 teaspoon and should have cut it back even more. The flavors are nicely balanced and work well until the cayenne kicks in, so I'm thinking a pinch under 1/8 teaspoon should do the trick.

Turkey and Quinoa Meatloaf

Great recipe! Addressed all the issues I've had with traditional meatloaf. This is so light, moist, and flavorful, seems a shame to call it meatloaf.

Buttermilk Pancakes II

Excellent! Found the go-to pancake I've been searching for. Wonderful texture and super fluffy. I always follow Alton Browns directions on mixing the wet with the dry; don't over mix,put the spoon down and walk away..let the batter sit for maybe 5 minutes to allow the baking soda to react with the buttermilk.

Extra-Yummy Fluffy Pancakes

Lets face it the basic pancake is not a knock your socks off flavor experience. I was attracted to this recipe because it had "real" quantities of cinnamon / vanilla....not the meager 1/2 teaspoon found in most recipes. On the other hand I was concerned about the tablespoon of baking powder..seemed a bit risky. All in all these are nicely flavored pancakes, get a hint of the baking powder, but not a deal breaker. Probably cut back to 3/4 Tbls the next time. Key to texture is to not go beyond the 5 minutes after mixing the dry with the wet. Baking powder reacts very quickly with moisture so waiting any longer will not increase the fluff factor.... just the opposite.

Cinnamon Belgian Waffles

A solid, very safe waffle recipe. Light texture with enough chew to make it interesting. The flavor...well it's good, nothing incredible but certainly not bland.

Sunday Morning Lemon Poppy Seed Pancakes

Wonderful idea and break from the Blueberry, banana, or strawberry...pancake! I adjusted the recipe so this is not a review of "as written". I skipped the vinegar by doubling the lemon, used the zest of 1 lemon vs 1 tsp. Everything else remained the defined. The quantity of poppy seed seemed a bit anemic as I mixed the dry ingredients, but turned out to be just perfect. These are wonderfully fluffy pancakes. Even though I cranked up the lemon the flavor was pronounced but not overwhelming.

Best Whole Wheat Chocolate Chippers

Delicious. I was skeptical, whole wheat? But what a wonderful surprise. The whole wheat (used white whole wheat) adds a really nice texture and depth of flavor not found in the normal cookie.

Baked Oatmeal I

Made this as written...can you imagine that? If you like oatmeal, as my wife does it was a winner. Bottom line is it's basically a bowl of oatmeal, baked. The baking adds a warm earthy note that plain oatmeal doesn't have. A review of the ingredients will tell you there are not a lot of "flavor" ingredients (vanilla, cinnamon...maple syrup...etc), so no surprise that everyone is adding and adjusting to suit their taste. Which makes this a fun basic recipe.
