Southwest Chicken Bake

This was a very tasty recipe. I used a mild taco seasoning mix and Chi-Chi's salsa. I didn't have green onions so I left those out and I used sharp cheddar cheese instead of Mexican-style. This is quick and easy and I will put it in my recipe box to use again and again.

Savory Vegetable Beef Stew

This is a very good base recipe for beef stew. You can change it up to suit your taste. I used beef stock instead of bouillon and water and upped the garlic to two cloves. I swapped out the regular potatoes for sweet potatoes and the green pepper for an orange pepper just because that is what I had on hand. I used a whole large onion because I love the flavor it adds. And instead of browning the meat in Italian dressing, I used a balsamic vinaigrette. This stew has such a rich, deep flavor. I added it to my recipe box and plan to make it again!

Easy OREO Truffles

I've been making a version of these for a few years now. They are easy and delicious. I dip mine in dark chocolate and refrigerate and then drizzle white chocolate over the dark chocolate, this makes for a pretty truffle.

Beef Stew IV

A very good stew. I substituted 2 cups of beef stock + 2 cups of water for the 4 cups of water, just to add more flavor. Other changes I made were to add an extra bay leaf and 3 stalks of celery. Instead of regular paprika I used smoked paprika and I used white pepper instead of black pepper. I also took the advice of an earlier review to bring the ingredients to a boil and then to move the pot to a 350 degree oven and cook for two hours. Add the vegetables and then back in the oven for 45 minutes. I really think that was good advice. The meat came out fork tender and the vegetables were delicious. I must say though that I don't feel it served a true six servings, more like four. I think I'll double the recipe the next time I make it.

Luscious Slush Punch

This is a very good punch recipe. I used ginger ale instead of 7-up and only one cup of sugar (which was plenty). Great punch for a party, but DO take the frozen mixture out of the freezer at least two hours before the party.

Quick Biscuits

This biscuit recipe is quick, easy and delicious. Today I used my left over Christmas turkey to make creamed turkey and biscuits. I made the biscuits according to the recipe and found it to be light tasting and very good with the creamed turkey. I will be keeping this biscuit recipe handy for future recipes.

Crab and Pea Salad

Garbanzo Bean Chocolate Cake (Gluten Free!)

This cake was wonderful. I made it for my annual Christmas Eve dinner when I realized that I had no dessert that my niece (who is allergic to wheat) could eat. Everyone enjoyed it. My niece even asked for the rest of the cake to take home following dinner. If you like chocolate, you'll love this cake! The only changes I made to the recipe were to use a Splenda/Sugar baking mix and I also doubled the baking powder after reading some of the reviews. Great recipe!

Greek Chicken Burgers with Feta

Excellent! I followed the recipe as written except for the fresh basil and fresh oregano. Since they are not in season, I used dried Italian seasoning instead. I used a meat thermometer to make sure they were cooked to the correct temperature and made sure to only flip them once while grilling. I served them on 100% whole wheat Pepperidge Farm Deli Flats (only 100 calories) and used a spicy hummas and spinach as my toppings. Delicious!! I will definitely make these more often.

Tantalizing Turkey and Blue Cheese Meatballs

I followed this recipe, but instead of making them into meatballs, I made them into sliders (tiny hamburgers). They were fantastic. I just shaped them into 2 inch patties and baked them in the oven. While they were baking, I took a baguette and sliced it into thin slices and then drizzled olive oil on each side and toasted them on a grill pan. When the sliders were done I placed them on the baguette slices and served them with ketchup & mustard. My college age son loved them.

Blueberry Buckle

Just made this today with fresh picked blueberries and it is delicious! I followed the recipe exactly, but left it in the oven about 10 minutes longer than the recipe called for. My college age daughter said she could live on this cake. I had a couple of guys working on our house and gave each of them a piece as well, they loved it and said it hit the spot after a long day of work.

Fluffy Peanut Butter Frosting

This is absolutely the best peanut butter frosting EVER!! I've made it over and over again and it always turns out fluffy and delicious. The only change I make to the recipe is to use half and half or heavy cream instead of milk. Gives it even more fluff. I usually top brownies with the frosting and when I take them to work or a picnic all you hear is YUM!! It melts in your mouth!!

Whole Wheat Blueberry Pancakes

This pancake was light & fluffy. I loved it. I followed the recipe exactly with only one minor exchange, I used Splenda Brown Sugar mix in place of the regular artificial sweetener. I think the brown sugar added a rich flavor. I also made extra to heat up in the microwave the following morning. This is a great recipe for those following the South Beach Diet.

Whole Wheat Biscuits

What an easy recipe! This biscuit has a wonderful taste. I used my food processor (with a dough attachment) to combine my dry ingredients, butter and milk. Just pulsed until moistened. I also substituted Splenda for the sugar. The inside was light & fluffy just as the title implies. A great way to add more whole grain to your diet.

Rosemary Roasted Turkey

I used this Turkey recipe for Christmas this past year. It turned out to be a huge hit. The herbs give this such a wonderful flavor and it looks great too. I cooked my turkey in an oven bag and it worked fine with this recipe.

Bread Machine Rolls

My husband and I are trying to stay on a healthy diet and this recipe was easily adapted to fit in with our lifestyle. I used 1 1/2 cups of bread flour and 1 1/2 cups of whole wheat flour instead of 3 cups of bread flour and I replaced the three tablespoons of white sugar with 3 tablespoons of Splenda Sugar Mix to reduce the sugar content. The rolls turned out great and even my teenage daughter who's not thrilled with wheat bread was impressed, in fact she finished off the last of them!

Chocolate Chip Muffins

This is a great muffin recipe. I also increased the milk to 1 cup instead of 3/4. Don't forget the sugar topping, at first it seemed like a lot of sugar, but it tastes wonderful and makes the muffins look scrumptious!
