Sam's Famous Carrot Cake

Made this minus the raisins only in a 9 x 13 pan and used orange cream cheese frosting from this site. I didn't get to try a piece because everyone at the function I brought it to raved about it and didn't save me a piece!

Whole Grain Breakfast Cookies

Substituted honey for the agave nectar. The dough was rather crumbly so I had a bit of trouble with it. I still found the taste appealing,and even used the crumbly baked bits as 'granola' over yogurt

Blackberry Jam

Spumoni Chocolate Chip Cookies

I used on package of pudding and added 1/8 tsp almond extract. Think it could use more pistachio flavor, so may play around with adding more pudding mix or extract next time. Also added a few drops of green food coloring for Xmas.

Cornbread Pancakes

Used a blend of all-purpose & whole-wheat pastry flour, as well as melted virgin coconut oil/butter blend. Exactly the taste I was looking for...Ate them with blueberries and real maple syrup.

Corn Dog Casserole

I used lowfat buttermilk instead of the milk, reduced-fat hot dogs (Hebrew National, they seem less 'mystery meat') and used slightly less celery and sage per others' comments. Baked in a wide, shallow dish so and took out a few minutes early. It came out perfect! Not mushy. Kids loved it. I may try some dry mustard next time as someone suggested.

Pumpkin Flax Quickbread

Unlike others, I think this actually needed a bit more sweetener for my taste, so next time I may use a blend of white and brown sugars. Texture was moist,not gummy. I will probably add some toasted walnuts next time too.

Raspberry Chipotle Sauce

Used a combination of chipotle peppers and canned jalapenos. Also cut the vinegar a bit. Delicious with grilled yams (sweet potatoes) and a little bit of light sour cream!

Donut Muffins

Followed the recipe, using unsalted butter (what I had on hand)and 1/3c. whole wheat pastry flour for some of the all-purpose. My daughter thought they lacked flavor beyond the sugar-cinnamon topping. Mine also stuck to the pans despite liberal spray of Pam

Pistachio Cake III

Even though I'd read the reviews, I still ended up with a sunken cake. I used a butter yellow cake mix and used sour cream in the mix. Next time I think that I'll let it cook the full 55 minutes. Although it didn't look perfect, it tasted good. I served it with a whipped cream/mascarpone cheese topping laced with almond extract.

Chicken Dumpling Strips

This was simpler than I thought it would be. Kids really liked the 'square' dumplings. Used leftover cooked chicken and veggies (cooked onions, celery, peppers, carrots) for the soup.

Jimmy Dean Sausage Crostini

Used Jimmy Dean crumbles..skipped the fresh basil (didnt have any) but added some dried Italian seasoning instead. Want to make it again w/ the fresh basil, and with the hot sausage like another reviewer mentioned.

McCormick® White Chocolate Kissed Gingerbread Cookies

These had a different spiciness to them than the soft gingersnaps I always make from this site. These looked lovely, but I myself didn't love it. Maybe it was the white chocolate kiss. I will make them again, may try a caramel kiss like another reviewer suggested.
