Beef Empanadas Recipe

Added chopped onion, cumin and adobo sauce to the meat filling. While I thought that the biscuit was a bit much, the kids loved them.

Vegetarian Tortilla Soup

Pistachio Cake III

Even though I'd read the reviews, I still ended up with a sunken cake. I used a butter yellow cake mix and used sour cream in the mix. Next time I think that I'll let it cook the full 55 minutes. Although it didn't look perfect, it tasted good. I served it with a whipped cream/mascarpone cheese topping laced with almond extract.

Chicken Dumpling Strips

This was simpler than I thought it would be. Kids really liked the 'square' dumplings. Used leftover cooked chicken and veggies (cooked onions, celery, peppers, carrots) for the soup.

Jimmy Dean Sausage Crostini

Used Jimmy Dean crumbles..skipped the fresh basil (didnt have any) but added some dried Italian seasoning instead. Want to make it again w/ the fresh basil, and with the hot sausage like another reviewer mentioned.

McCormick® White Chocolate Kissed Gingerbread Cookies

These had a different spiciness to them than the soft gingersnaps I always make from this site. These looked lovely, but I myself didn't love it. Maybe it was the white chocolate kiss. I will make them again, may try a caramel kiss like another reviewer suggested.

Mocha Walnut Cookies

Made these for Christmas. Followed others' suggestions, adding 1/2 c. extra flour and chilling dough for an hour before baking. Got 48 nice,round cookies. Had to sample for myself and found they were a rich, dark chocolate, perfect with coffee or mocha hot chocolate!

Giant Chocolate Chip Cookie

I made this in 2 9-inch cake pans, using Nestle's dark chocolate chips and added 1/4-1/3 c. ground pecans to the batter instead of chopped nuts. It came out just right, soft and chewy!

Pumpkin Rice Pudding

I really want to like this, because it combines two of my favorite things. I used brown rice and lowfat milk to make it healthier, and substituted brown sugar for white. The key is to temper the egg prior to adding it to the boiling milk. The end result seemed to need more sweetness and spice. I had mine with some toasted pecans and whipped cream. I'll play with this recipe some more.

Apple Cake V

Everyone loved this. Followed suggestions including substituting 1/2 c. applesauce for some of the oil, adding 1 T cinnamon to the batter and tossing the apples with some cinnamon and nutmeg before adding.

Roasted Spicy Garbanzo Beans

I cooked these about 40 minutes or so and then after adding the feta and thyme, tossed some of the garbanzos with whole wheat penne and some sauteed spinach,onions and diced peppers for a simple dinner for myself.

Sparkling Green Tea Lemonade

I agree that the name really ought to be 'limeaide'...I used Lipton's Green Tea with Honey hoping for extra sweetness. I still ended up adding plenty of sugar and a little extra lime juice to get the flavor just right. Will play around with amounts again...

Simple Chicken Parmesan

I followed another reviewer's suggestion of marinating the chicken ahead of time in buttermilk (made with lowfat milk with vinegar). Followed the cooking instructions and the results were crispy on outside, moist inside. My kids loved this...

This is definitely for those unafraid of a lot of garlic! Served it over whole wheat pasta, and a little goes a long way since it does have a lot of oil. Used grated Asiago cheese in it.

Sweet Potatoes with Sausage and Peppers

Followed one person's suggestion to roast my sweet potatoes instead of boiling, and I think that made all of the difference. Also chose roasted red pepper chicken sausage and Mrs. Renfro's roasted salsa. The combination, along with a little shredded cheese on top was delicious. Definitely going to make again!
