About this Cook

My favorite things to cook
Anything my husband likes. And when he's away-fish.
My favorite family cooking traditions
Use of sage. Canning veggies.
My cooking triumphs
Lots of dishes, thanks to!
My cooking tragedies
A couple of recipes using a popular baking mix. Pot pie and cobbler. Maybe the mix was old?!

Spinach Quiche
Very good and nice consistency. I did not have mushrooms, so I used some green and orange peppers instead. I used skim Lactaid milk and plain feta cheese and only one clove garlic. I think the prep time should be longer. I cut up my veggies the night before and still had 20-30 minute prep time. Also I used a 9 inch deep dish pre-made frozen crust and there was too much egg/milk mixture. Will definitely make again.

Enchilada Pasta Bake
I agree with the others who said this was too dry. It also seemed to be too much pasta for the other ingredients so I did not add the full amount cooked. The taste was good though so next time I will add more tomatoes or even salsa.

Colleen's Slow Cooker Jambalaya
Left out the shrimp because hubby doesn't like. It is very spicy although I'll say that I didn't measure- just estimated the spices and I did not have Cajun seasoning but looked up a recipe for that and improvised.
