Reviewed: May 5, 2012
Added 5 pressed garlic (love love love garlic!); a pinch of pepper flakes to give it a zing. I didn't have to flip the fillets. I baked the fillets for 4 minutes, then topped them with the Parmesan mixture and baked them for a 4 more minutes. Fantastico!

Lemon Bars I

Reviewed: Mar. 28, 2012
The crust was too hard! I think next time I will bake the crust for 15 mins instead of 20 mins. Also the top filling was burnt. I will also bake the filling for 20 mins. instead of 25 mins. next time I make the bars. Also I will double the filling as there wasn't enough filling for me. It was too flat. Thank you!

Chinese Pepper Steak

Reviewed: Mar. 13, 2012
EXCELLENTE! I was craving for Chinese food, but didn't want to drive to town. And I found this recipe. OMG! This is so wonderful! I marinated the beef overnight. The beef was to tender. I added sliced celery and YELLOW onions. I remembered to add tomatoes. I added the tomatoes last just before serving and after I turned off the stove so as not to overcook the tomatoes. First, I cooked the meat in 3 portions. Do not cook the whole batch of meat at once or it will become soggy and watery. Then I combined all the meat and veggies and cooked it for 5 minutes. I also added oyster sauce. PERFECTO!

Eggplant Supper Soup

Reviewed: Mar. 12, 2012
PERFECTO! I didn't change the recipe. I thought why change it if it's working for others. As recommended by others, I added 1 sliced zucchinis, 1/2 cup uncooked rice and pepper flakes. I used 4 tomatoes because I was out of canned tomatoes. Results - DELICIOSO! I ate 4 bowls of soup! My neighbors and my husband devoured the soup. My 3 school age kids didn't eat much of it. I should have told them it's vegetable soup. I think the word "eggplant" threw them off the grid!

Oatmeal Peanut Butter Cookies

PERFECTO! I followed other bakers' recommendations. I added 1-1/2 cup oats, 1 teaspoon vanilla, 1-3/4 flour, chocolate chips, and used 1 stick unsalted butter and 1/2 cup crunchy peanut butter. I didn't change the butter/shortening ingredients because it is working for others. I thought why change that if it works? Results - HEAVEN! My 4 kids and hubby devoured them. My hubby is not an oat person and he couldn't taste the difference. Thank you!

Fluffy Pancakes

Excellente! Perfecto! The Best pancake ever (coming from my 4 school age kids). First time I made it, I followed the recipe exactly as directed. Turned out Wonderful! Second time I made it, I used apple cider vinegar and added 1/2 teaspoon vanilla extract. I also beat the egg white into the sour milk first, then added the egg yolk, as recommended by viewers. This turned out even more wonderful! And I love the smell of the vanilla. Also I doubled the recipe because my kids ate 4 pancakes each!! I make this pancake every weekend for breakfast when the kids are home. Thank you Kris!
