I cooked and diced Italian Sausage first, then added 1 cup chopped onion, 5 cloves pressed garlic (WE LOVE GARLIC), sauteed in the pan altogether. Then I added 5 cups beef broth, 1/2 cup water 1/2 cup red wine, 4 large tomatoes - peeled and chopped, DID NOT seed tomatoes, 1 Italian canned diced tomatoes, 1 cup shredded carrots with Cheese Grater, 1 teaspoon dried basil, 1/2 teaspoon dried oregano, pinch of pepper flakes, 1 (8 ounce) can tomato sauce, OMITTED. After simmering for 30 minutes, I added 1 1/2 cups cubed zucchini, and served with cooked tortellini pasta, sprinkled chopped fresh parsley and Parmesan Cheese.
