Balsamic Roasted Pork Loin

I made this for the first time last night and it was awesome! I had to make changes to accommodate for what I had in the house and it turned out super tender and full of flavor!! I used 2 tablespoons Montreal Steak Seasoning, 1/2 cup creamy balsamic vinaigrette (Ken's Dressing brand), 1/3 cup olive oil, 1 tablespoon minced garlic and a pork loin cut in half. I put the meat in the marinated and covered all sides, then took out and browned in a hot pan and put back in marinade for two hours. I cooked for 40 minutes at 350 degrees then took out, cut into pork chop size slices and browned in hot pan until cooked through.

I am getting ready to try these, has anyone tried using applesauce to substitute for the oil? How did it work; were they too dense?
