Simple Soy Sauce Chicken

I really loved this! I used a homemade Italian style dressing and boneless skinless chicken thighs. I used my slow cooker (a couple hours on high and a few more on low) and the chicken just fell apart. I also added some parsley and scallions at the end. Definitely a keeper!

Sloppy Joes II

I like this quite a bit, but I leave out the brown sugar. Even without it, the sauce borders on too sweet for my tastes. This isn't a saucy sloppy joe recipe; most of the liquid evaporates during cooking. I personally prefer that over a runny sauce. Bonus: it's so easy to throw together! On lazy days I just substitute 1T dried minced onion for the chopped onion and leave out the bell pepper.

Southwestern Egg Rolls

These were so good. Very similar to Chili's. I baked them at 400 for about 15 minutes, turning once. I did not have to use a tooth pick; they stayed together just fine. I left out the spicy stuff for one roll and my picky 5 year old ate the whole thing!

Nice texture, but I wanted a stronger corn taste, so I increased the amount of corn meal and decreased the amount of AP flour.

Ranch Dressing II

Followed the recipe exactly the first time and it was really just like a vegetable dip. The second time I reduced the dill by half and used buttermilk instead of sour cream...perfection!

Wheat Crackers

I liked this cracker recipe as written; I do think it is important to sprinkle a good amount of salt on the top. Also, my palate is still adjusting to the taste of whole wheat flour, so I added a couple teaspoons of time I think I'll add a bit more. These were very easy to roll out and got really crispy after 20-23 minutes in the oven.
