Annie's Fruit Salsa and Cinnamon Chips

Excellent recipe. I used apricot preserves and it was perfect - didn't overpower the other flavors. The best tip: If you're in a hurry or need a BUNCH, skip the homemade cinnamon chips and get cinnamon/sugar pita chips from the store. It was AWESOME with those!

Hillbilly Punch

This is SO SO GOOD! We "auditioned" many different alcoholic beverages to serve as a signature drink for our wedding - this won and people raved about it!!!

Microwave Baked Apples

Excellent. You need to use a firm apple for this - I prefer Fuji. I cut up the apple into sections, sprinkle it with cinnamon and splenda only (no butter or sugar) and microwave 5-6 minutes until soft. It's super low-cal and easy.

Asian Lettuce Wraps

This is an awesome recipe. My husband doesn't like the lettuce thing, so I serve his over rice. You can't lose with this. Tastes just like PF Chang's lettuce wraps.

California Roll Salad

My husbands likes sushi, but doesn't like salad - and he loved this. It's very adaptable...I didn't having ginger or wasabi and it still turned out great. I added scallions for a little bit of an onion flavor (not in sushi, I know, but it tasted great with the avocado). It's very FILLING, too, so it's great for a healthy summer meal.

Caramel Filled Chocolate Cookies

Fabulous cookies - the dough is very sticky to work with...I store it in the freezer for an hour before I work with it and take a small bit out at a time. Rolos work perfectly.

Super-Easy Rocky Road Fudge

This recipe is divine and super simple. My choco-holic sister-in-laws can't get enough of it. I added it to my cookie tray at Christmas and it is a hit. Also, try using butterscotch or peanut butter chips or milk chocolate. Or add some mint extract. So, easy and so adaptable!

Pumpkin Crunch Cake

This is a Thanksgiving and Christmas tradition in my family - this is the best pumpkin recipe ever. My brother calls it "Pumpkin Pleasure." Switch this for the boring ole pumpkin pie and people will rejoice!

Pizza On The Grill I

Pizza on the grill is SO easy! I was a sceptic about it (falling through the cracks, not cooking evenly, etc.) -but it turned out great. I did put my pizza under the broiler to really get the toppings hot without burning the crust, but that may not be necessary depending on your grill. I will use this for a pizza night when everyone puts the toppings they want on individual pizzas.
