Carol's Chicken Salad

This is a great chicken salad recipe! I was doubtful even with all the rave reviews but this one is a keeper. I followed directions exactly except I used less poultry seasoning (under 1/2 tsp). It is fabulous on a croissont.

Bacon Mushroom Chicken

This was excellent and the kids loved it. I precooked the bacon strips about halfway before laying them on the chicken, thus reducing the grease content of the sauce. I doubled the sauce and served it over egg noodles. The chicken breasts I used were boneless and skinless and turned out flavorful and moist. I diced the leftover chicken and used it for chicken salad. Very good!

Rick's Special Buttercream Frosting

I liked this buttercream very much. I used half butter and half regular crisco. Frosted a Black Magic cake and then drizzled it with ganache. Yum!

Pumpkin Cheese Bread II

This was very good, moist, dense, and flavorful.It is a "short" loaf just like the picture shows. It is delicious! I was out of white sugar and used brown sugar in both parts and it was great. Please note that yes, the pumpkin batter is very thick. Just spoon a bit into the bottom , enough to cover. Then pour the cream cheese on. Then use a spoon and drop large scoops of pumpkin batter all over the top, and then use the spoon to gently spread the scoops together to cover the cream cheese. It's not hard at all and worth the great result. This is best when wrapped in plastic wrap and refrigerated overnight.

Creamy Butternut Squash With Cinnamon Soup

This isn't just making soup.. this is a culinary experience! The smell of the vegetables while they saute is wonderful. The golden beautiful color of the vegetables is amazing and then the fragrant spices fill your kitchen. This soup is amazing. It has the most wonderful taste. Best butternut soup I have made or tasted! I loved the warmth of the cayenne pepper also; I might use a tiny bit less next time though, but don't leave it out! Wonderful for a chilly fall night or cold winter day.

Black Magic Cake

This was a really good, moist cake with stronger flavor than the other Hersheys Chocolate cake recipe on this site. Very good frosted with a white buttercream and drizzled with chocolate ganache.

Chicken Enchiladas II

I made this recipe using ground beef instead of chicken. I just browned a pound and a half of beef with half a chopped onion and followed the rest of the recipe. I did use extra cheese on top, and used half medium cheddar and half monterey jack. This is delicious!

Chewiest Brownies

These are SUPER GOOD! I made them in a 9 by 9 pan, sprinkled them with chocolate chips and pecans, poured on about half a bottle of Caramel ice cream topping, and baked for 40 minutes. To Die For!!!!!!!!

Spinach and Strawberry Salad

I relaly liked this easy recipe but my kids gave it a thumbs down. They did not like the "sweet and sour" taste. Use the best quality, ripe berries as possible, and do not make more than you'll eat, as the leftovers are just yucky (wilted and soggy).

Crabless Chicken Cakes

This was just ok. I made 2 batches: one with chopped chicken, but the cakes fell apart while cooking, and one with all the ingredients in a food processor. The second batch held together and looked more like crab cakes but they definately did not taste like crab cakes. Just sort of plain. Will not make them again.

Best Big, Fat, Chewy Chocolate Chip Cookie

I bake a lot. I have made a lot of cookies, lots of chocolate chip cookies. I like CHEWY cookies. I do not get what all the fuss is about with these cookies. I followed the recipe exactly, twice. Once I refrigerated the dough and once I did not... made little difference. The cookies are slightly crisp on the edges, but the middles are doughy and soft. I baked longer and the edges got harder but middles stayed soft/greasy. When warm they fall apart... too greasy/sweet, slightly chewy. When cooled, more crunchy, not very chewy at all. I also tried making them different sizes but they all turned out about the same. Very mediocre, bland "okay" cookies.

Spinach and Mushroom Salad

I hate to be the downer but I really did not like this recipe. Maybe it was the bacon grease dressing, but it was just "blah." I prefer a spinach salad with red onions and croutons in addition to the bacon, eggs, and mushrooms.
