Shrimp Burritos
I made these burritos without the beans and enjoyed them tremendously. They are just like the burritos down the street at the local Mexican restaurant. I used half a small can of chipotle chili peppers in adobo sauce and mixed them with plain greek yogurt and lowfat mayonnaise. I defrosted frozen shrimp and sautéed them in a frying pan with a little garlic...I melted the cheese on the tortilla by microwaving it for about 15 seconds before applying the other ingredients. I did not omit the salsa on the burritos as others did. Great recipe....

Sweet Potato Zucchini Hash
I had alot of zucchini in my garden this year and wanted to try something different. I did use only two tablespoons butter and one tablespoon of brown sugar. I liked this alot. I served it with dinner as a side dish.

Chorizo Breakfast Burritos
I have been making thewe burritos for years. the only difference is that I do not add chilu peppers..The chorizo is spicy enough without them. I also add diced potato.. Cook a diced potato in butter until soft, then add the chorizo...My teenage son and his friends just love them
