Cinnamon Ice Cream

This was my first attempt at ice cream, and it turned out perfect. I took the advice of others and reduced the sugar to 3/4 cups, and the cinnamon to 1 tsp. It was perfect. I agree with one of the other reviewers, that it tastes kind of like snickerdoodles. I am going to try other flavors with this same base. Love it!

Hummus III

Great hummus recipe! Insteas of using canned beans, I used 1/2 a pound of dried beans. Just soak them in 3.75 cups of water overnight in the fridge, rinse, and simmer for 1.5 hours with 3.75 cups of water. I used the juice from the beans to thin out the hummus to my liking. I processed mine in a food processor instead of a blender - I think that's easier.

Eggplant Parmesan II

I made this recipe last week. It was really good. We had it on top of angel hair pasta. The only thing I didn't like was that it took me about 1.5 hours to go through all the steps. It felt like a lot of food. I used 3 medium-small egg plants, and I think there are probably 8 servings.

Baked Asparagus with Balsamic Butter Sauce

I thought this recipe was pretty good. The asparagus baked nicely, and the sauce was fine. I didn't find it outstanding though. I felt like the taste of the sauce was overwhelmed by the natural flavor of the asparagus, and didn't add much to it. I probably could have been just as happy with plain roasted asparagus.

Creamy Au Gratin Potatoes

Apple Pie by Grandma Ople

I made this pie for my husband and inlaws. It was fairly easy to make, and got good reviews from a couple of picky eaters. I used the store bought pie crust, that's refridgerated. I only needed 4 extra large granny smith apples to fill the pie crust, and added 1/2 a tsp of cinnamon to the sauce. I ended up stirring in most of the sauce, with the apples. I saved a little to brush on top later. I'll definately make it again.

Dinah's Baked Scallops

I didn't really like this recipe. I cut the butter and lemon in half as suggested by other users. I also broiled it the last few minutes to get it crisp. The main thing I didn't like was how bland they tasted. I think they would have been better sprinkled with seasoning and baked w/butter and wine. I didn't think the cracker crumbs really added anything to the flavor. We have leftovers that nobody wants. I probably won't make this one again.

Butter Roast Chicken

I made this last night. The flavor was good and the chicken was moist, but I couldn't get over all the fat and grease in the pan. I made the recipe as printed but when it came out of the oven, the chicken pieces were swimming in fat (butter and chicken). Maybe it would be better if the recipe for the sauce was cut in half.

Greek Salad I

Classic Tiramisu

Great recipe! I made it for a party I was hosting, and everyone loved it. I used the hard ladyfingers, in the cookie aisle. The brand I used was called Alessi. I made 15 single servings, using custard cups, and put the cups on doily lined bread and butter plates. I dusted the tops with cocoa and shavings off a Hershey bar. I didn't measure the amt of Kahlua that I used, but it was a lot more than the recipe called for. I dipped the ladyfingers in it instead of brushing it on.

Apple Crisp III

I love this apple crisp without the oats, and made it twice. I used a cup of brown sugar instead of 1/2 brown and 1/2 white. I left out the water, and just mixed the cinnamon in the topping. I used Granny Smith apples for the recipe, 4 large or 6 small.

Pumpkin Cake III

I made this recipe as stated in the directions, but cooked it in cupcake tins for 15 minutes, and it turned out fabulous! They were very light and moist. Mmmmm, definately a hit.

Pumpkin Roll I

This recipe was fantastic. I lined the bottom of my jellyroll pan with parchment paper, and it was very easy to remove from the pan. I loved how this turned out. It was so pretty cut in slices, with powdered sugar on top. This was the only dessert that was completely eaten at our potluck dinner on Sunday.

Caribbean Chicken Salad

Even though my husband didn't like it, I have to give this recipe 5 stars because I liked it so much. I loved the way the dressing, salsa, pineapples, and tortilla chips tasted together. I didn't change a thing about the recipe, and it was great.

World's Best Lasagna

I made 2 batches of this for lunch yesterday, and everyone loved it. It made more meatsauce than necessary, and I only used 6 lasagna noodles for each pan. Next time I may cut back on the salt. All in all it was a great recipe.

Tomato Curry Chicken

This turned out really well. I used boneless skinless thighs instead, and reduced the baking time to 45 minutes total. I also doubled the amt of curry powder. I served this with saffron basmathi rice and green peas. Yummy!

Breaded Chicken Fingers

My husband loved these. I thought they were good too, but a little salty for my taste. It may have been the brand of seasoned breadcrumbs that I used. Next time I'll probably cut back on the salt and pound the thicker ends of the chicken breast to make them thinner.
