Chef John's Peach Cobbler

I made this recipe because I had a bunch of white peaches from my tree that were all ripe at once. It look a lot longer to cook than the instructions indicated, but turned out absolutely delicious. After it slightly cooled, I served it to my guests with vanilla ice cream. It was a hit. I was looking for a recipe that was a true cobbler, not a crumble or cooked peaches with biscuits on top. This was more cakey, and certainly, heavenly. Chef John has my endorsement.

Chicken Tortilla Soup I

The soup came out delicious. The only adjustments I made were adding a teaspoon of cumin, per other reviewer recommendations. I used red kidney beans instead of black beans and I omitted the hominy. The flavor of the soup is outstanding, but what really makes great is the toppings. Yum! I love that it was quick and easy to make. A great way to use some leftover chicken. I definitely plan on holding onto this recipe to make again.

Spiced Parsnip Soup

I didn't know what to do with all the parsnips I got from the CSA (mixed box of produce). This was the perfect recipe. Simple, yet tasty. It really brings out the usual flavor of parsnips. All the ingredients were right on. I didn't make any adjustments.

Chocolate Cupcakes

I was very pleased with this recipe. I doubled the ingredients and followed the recipe exactly. Makes a perfect chocolate cupcake. They look and taste great. Topped them off with a cream cheese frosting.

Cupcake Princess' Vanilla Cupcakes

I doubled the recipe and followed it exactly, including the doubling instructions. The texture came out strange. Really chewy and not cake like. I still served them at a birthday party,
