The Best Parmesan Chicken Bake

Tried this last night and it was a big hit. It was super easy to make, and the croutons gave it a nice crunch. A much healthier version of chicken parm!

Thanksgiving Meatloaf

I followed recipe exactly, except used regular apple (not granny smith) and instead of poultry seasoning I used fresh sage from the garden. This was great! Even my picky kids liked it.

Focaccia Bread

Easy to make and really good! My two young boys really loved it too! I think you can add lots of toppings to it (sauteed onions, zucchini, etc.) to make more of a pizza. I'm going to try this next time!

Fiesta Fry Pan Dinner

This was great. I used yellow squash instead of zucchini b'c that's what I had. Also, instead of instant rice I already had a bowl of leftover long-grain rice in the fridge so I just mixed that in. I put helpings of the mix into tortillas and rolled them up. YUMMY!

Carrot Cake III

I followed this recipe exactly (except skipped the butter in the frosting) and it was great! The cake is wonderful. It did fall a little in the center and I'm not sure why. I stirred by hand, so maybe I should have beat it with my mixer? Either way, once the frosting went on, it was beautiful and yummy!

Baked Chicken Nuggets

I made these in my convection oven and they came out tender on the inside, crispy on the outside. I used milk instead of butter. Saved on calories and they were great!

It's Chili by George!!

This was very good! The only things I did different was: 1. used Bloody Mary mix for tomato juice, and only used 16 oz. 2. Added two cans diced tomatoes with juices. 3. Used 3 teaspoons brown sugar instead of 1/2 teaspoon white sugar. I made this for a Superbowl party and everyone loved it!

Asian Beef with Snow Peas

This was really good and easy. I used the frozen bagged stir fry mix with broccoli which really cut down on time! Definitely use fresh ginger. It adds a lot of flavor. Served with white rice.

Beef Tenderloin With Roasted Shallots

This was unbelievably good! I used the "choice" tenderloin instead of prime. The butcher told me both are so tender that paying the extra money for the prime wasn't really worth it. Anyway, the sauce was great. Perhaps a little heavy on the shallots since the sauce thickened up so much. I ended up adding a little water to the sauce to make it more liquidy. It was so tasty though! I probably would not use bacon next time. It didn't blend as well with the sauce flavors as I thought it would. Like others said, this sauce can be used for any beef. I will try it with roast beef next (since tenderloin is so $$$). I made this with Gourmet Mushroom Risotto and Buttery Carrots for sides. YUMMY Christmas dinner!

Gourmet Mushroom Risotto

OMG, was this goooood! I served this with Christmas dinner. I put my mom in charge of stirring and adding the liquid, etc. Very tedious, but totally worth the effort! I served it alongside beef tenderloin and buttery carrots. GREAT!!

Chicken Lasagna IV

This was really good! I cooked the onion like others suggested. I also left the mayo out because that didn't sound appetizing, and used garlic powder instead of salt. I only baked for 40 minutes when I noticed the top was browning. One hour seems way too long! Will definitely make again!

Barbie's Tuna Salad

An odd combination of ingredients, so I was surprised at how much I loved this tuna! I'm used to making mine with a little onion and celery, mayo and a little mustard. This tuna was definitely jazzed up! I added a little finely chopped red pepper and onion to the mix. Soooo good!

Angel's Pasta

This was REALLY good. I made it as a side dish. TH eonly changes were I used grape tomatoes (about a half a container) and then a can of diced tomatoes with juices. I also added a sprinkle of dried basil in addition to the fresh. At the end I sprinkled a few tablespoons of fresh romano that I had on hand. Other than that I followed the recipe exactly. Superb!!

Shrimp Linguine

This is really really GOOD! THe first time I made it according to the recipe and it was great. The second time I made it I was out of tomatoes, so I used Italian diced in a can. I also had fresh Pecorno Romano, so I replaced the Parmesan with that. I didn't have Monterey Jack, but I did have shredded Mexican blend with the jack cheese in it, so I used that. I must say, I liked it even better with the changes! I think the canned tomatoes with the juice added a lot to the sauce. But the original was great too. It was the first time my 8 year old had shrimp and he raved about it and kept asking me to make it again. :)

Grilled Salmon Sandwich with Dill Sauce

this was pretty good. I didn't care for the sauce, however. The lemon overpowered. I'm going to try again and do something different with the sauce. Perhaps add a little mustard powder.

Turkey Jambalaya

This was very good, even my eight year old gobbled it up! The only thing I did different was I used sweet turkey sausage instead of hot, b'c my family doesn't like super spicy food. The cajun spice added just enough zing for us. Excellent!
