Mom's Zucchini Bread

This is the best zucchini bread I have ever had. Instead of 1 cup of oil I used 1/2 cup apple sauce and 1/2 cup oil to cut down on the fat. It did not make any difference in the taste. It was great

Taco Pie

This is a great base recipe. You can add just about anything to it that you like on tacos. Instead of using a square cake dish I used a 13 x 9 pan and I was able to get all the ingredients in the pan.

Marinated Grilled Shrimp

This is a GREAT shrimp marinade. I was getting tired of the same old lemon and oil marinades and decided on this one because of all the reviews. I glad I picked this one. I didn't change a thing and it turned out great.

Turkey Tetrazzini II

This was really good. I added onions, garlic, fresh chopped parsely, fresh mushrooms, and peas & carrots to the sauce mixture then added the noodles. Poured it into a greased pan, topped it with the cheese and baked. I will definately make this again.

Asian Lettuce Wraps

I made these for my family last night and they LOVED them. I did change some things to my taste and to save on calories & fat. I substituted the rice vinegar for white vinegar, instead of chili pepper sauce I used chili flakes, I used ground turkey and omitted water chestnuts and I used fresh ginger (I think pickled ginger should only be used for sushi). I also added 1/2c chopped cilantro to the meat mixture before serving. I used carrots & red peppers as garnish to add crunch and lime wedges on the side. This recipe is a keeper.

Roast Sticky Chicken-Rotisserie Style

This is a great recipe!! I did change some things. I cooked this in a crockpot and I used 1 5lb roaster. I only added 1 onion in the cavity along with 1 bulb of garlic (peeled & smashed). I used the spices as stated and put it in the fridge overnight. Before I went to work I put 3 balls of foil at the bottom of the crockpot and set the chicken on top. Do Not add any liquid or you will end up with soup. I cooked it on low for 8 hrs. I came home from work to the Wonderful smell of roast chicken. All I had to do was toss a salad and dinner was done 10 minutes after I got home. I will definately make this again.

Strawberry Spinach Salad I

This is a wonderful recipe, because kids actually eat it. I did change the dressing though. I used 1/2 olive oil and 1/2 balsamic vinegar ( if you use fresh strawberries they add enough sweetness). I also used toasted pecans and crumbled feta cheese, ( you can also use crumbled blue cheese). It was delish!

Spanish Flan

This is a great recipe for flan and it is very simple. I have never made flan before and my husband always raved about his mothers, so I decided to give this one a try. I looked at all the other recipes on this site and decided on this one because of the simple ingredients and I found out that traditional flan is a very simple dessert. I tried using an 4 eggs first, but I found it too thick for my taste. I made it again with just the 3 eggs and it is perfect. I did however use a blender to mix everything together and I used a water bath to bake it. This recipe is a keeper.

Gourmet Mushroom Risotto

This was an excellent risotto dish made in the authentic way. You cannot make risotto in a rice cooker as another rater suggest, and I certainly would not use red wine. Having been to Italy before and tasting risotto this recipe is very good.

Apple Downside-Up Cake

This was a very fast and easy recipe to make, but I thought it was not very good. It was a very dry cake and following the cooking time it did not cook the apples all the way. I will not make this again.
