Mom's Shredded Elk Sandwiches

We used this for an odd shaped venison roast. What a great recipe! Easy, tasty and great left overs. What more can you ask? We made this one weekend and ended up freezing the meat and using that afterwards for sandwiches on the ski hill a week later. The meat still tastes good cold! We will use this again for sure! The only thing we changed was we used deer instead of elk.

Shrimp, Sausage, and Fish Jambalaya

I looked at this recipe and thought, wow, this looks complicated because of all the ingredients, but it wasn't as bad as I thought! Actually, it was pretty easy and tasted fantastic! Unfortunately we couldn't find andouille sausage, but we used chorizo instead. We also like a bit of heat added so we used some hot sauce after to spice it up. We are definitely adding this to our recipe box!
