Homemade Shake and Bake Mixture

This has completely replaced Shake and Bake in my house! I use it mostly for drumsticks. I do significantly decrease the amounts given as for 5 drumsticks it makes way too much. I sometimes just use whatever spices I feel like adding and I have never added a tablespoon of salt to this or most other recipes so I cannot comment on the saltiness as presented.

Chicken Pot Pie IX

This was great! I pretty much followed the instructions but added celery salt instead of celery seed and also added poultry seasoning. I made my own rotisserie chicken for Thanksgiving and this was how I used the leftovers. I made the filling the day before and then heated it up with a bit of extra milk the next day when I added it to the pie crust. I got rave reviews from my dad and my daughter!! "Best Chicken Pie I've ever tasted!" Definitely a keeper!

Pork Chops Italiano

I put this in my Recipe Box because of it seemed to be a very healthy recipe...according to the nutritional information...although I wonder if it was calculated correctly?? Anyway..it was quite simple to make and it was VERY tasty! I used a 540 ml can of Alymers Cracked Black Peppercord and Roasted Garlic stewed tomatoes and the flavour was AMAZING! I used a red pepper but otherwise I followed the recipe pretty much exactly. The sauce was so good it might be good as a pasta sauce on it's own and I will defiantly try this with chicken. * I did try this with chicken..not as good..something about the pork chops I guess!

No-Knead Artisan Style Bread

PERFECT!!! My first ever time making any kind of bread without a bread maker and it was EXCELLENT! I am making another loaf for tomorrow. I made only one small change which was to only add 1 tsp salt instead of 2. I followed the instructions exactly and it was really SOO easy. The loaf was entirely gone in 10 minutes. This might be dangerous for my waist line!

Banana Crumb Muffins

There is a reason that this recipe has over 5000 reviews and 5 stars. It's AMAZING!!! I made it with the substitution of 1/3 cup canola oil but otherwise exact. It turned very well. I don't bake often because everything is a disaster for me, this wasn't! The only problem....how to ripen bananas faster!

Strawberry Spinach Salad II

This is simple and tasty! I love the addition of the sesame oil. I had one comment that is was a bit too sweet so I will cut down on the sugar next time. I also added slivered almonds..perhaps I will toast them in sesame oil. I might add some feta as well. But really the salad is great as is!

Oven Baked Jambalaya

This is so easy and so perfect! It has turned out perfectly every time I make. I pretty much follow the recipe exactly including making the Creole Seasoning Blend. I use a rotisserie chicken for the chicken to save time. I have made this for the last 5 dinner parties I have hosted and everyone RAVES!

This is REALLY good! I had no evaporated milk so I used 1% and it turned out just fine! Until now I had been completely useless at making icing so just used store bought, this is so much better!

Split Pea Soup

This recipe is great and can be tweeked to your own preference. I threw all the ingredients into a crock pot, didn't rinse the peas and threw the ham bone in with all the meat on. I cooked it on high for several hours. I probably added more liquid than the recipe called for but then I just threw in a whole bag of dried split peas..so thought I would need more liquid. THe soup was REALLY thick, and so I add more chicken broth to every serving. I also used Thyme instead of marjoram as i didn't have that in the cupboard. I will definately use this recipe everytime I have a ham bone.

Taco Seasoning I

I bought the shells, the beef, the sour cream, the cheese...but I forgot the TACO SEASONING!! I found such positive reviews for this recipe I thought I'd try it! I will NEVER buy a package again. THis was perfect. I didn't have any oregano on hand so left it out...it was great anyway!

Lower Fat Banana Bread I

WOW! I don't bake much, but I had to clean out the overripe bananas in the freezer so I searched and found such great reviews for this recipe that I had to try it. I am impressed!! I followed the suggestions for using 1/2 cup sugar, 1/4 cup (+ a bitmore) applesauce, and throwing in some chocolate chips. I made it in two mini-loaf pans with enough extra for 3 muffins as well. I cooked for about 40 minutes. Turned out great. They have been out of the oven for thirty minutes and the three muffins are GONE!! Good thing they are low fat...does this mean I can eat the whole thing and LOSE weight!! LOL! GREAT recipe!
