Creamy Macaroni and Cheese

Added paprika, needs a bit more flavor (salt & pepper). Used heavy cream insgtead of milk as other reviewers suggested. Very good, very creamy. Just seems to be missing a certain something to punch it over the edge.

Southern Dill Potato Salad

Classic. Yum. We've all had the unpleasant potato sald experience. Potato & pasta salads....the staples at nearly every buffet, pot luck & picnic, are rather like playing roulette. Nice or NASTY. You can never be 100% sure before that first bite. ;-) This one is YUMMY!!

Slow Cooker Chile Verde

Fantastic....after tweaks. Used pork loin instead of shoulder. Seared before adding to crockpot. Used 3 onions & 10 cloves garlic. Pureed these together & satueed in same pan as the pork, after the pork was done. Added 2 & 1/2 cups chicken broth. Used large fresh tomatoes instead of canned. Added cumin, oregano & sea salt to pot. Broiled 3 poblanos, 2 jalapeno & 2 yellow/green bell peppers. Sweated in a bag. Peeled & pureed with 1 bunch fresh cilantro. All into the pot. On high until good & bubbly. Then down to low & left for 8 hours. Serve over steamed rice & topped w/ a sprinkle of pepperjack cheese.

Southern Dirty Rice

Wanted to love this....I really, really did. Followed it to the letter. Got brave and went for the liver. Mistake. Liver just is NOT for me. Don't let the die-hard liver reviews fool you (like they did me). This may be good....with ground beef. But liver?

Greek Style Potatoes

Delicious, but needed a little tweaking to give it that extra something. Added 7 cloves of garlic (whole) to the roasting pan. Added a sprinkling of kosher salt after roasting. Also tossed with about 1 tablespoon each of feta & mint. The amount of liquid was perfect. Super soupy going in the oven, but after 2 hours was just exactly the right amount of moisture / crispiness.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Wow! Just wow! Followed the recipe exactly except no bread crumbs. Didn't have them onhand so left them out. Otherwise followed it to the "T." Loved the way the flavors of the blue cheese & port wine played off eachother. This is an instant favorite. Inexpressably stellar.

Garlic Prime Rib

Cooking time was way off for me, but since we were using a meat thermometer to monitor by temp not time we still had a perfect med-rare result. Just much later than planned. Even with that this recipe is fabulous. Amazing flavor. Beautiful pink color. Amazingly easy to make prime rib.

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Giving this a 4. Used far more blue cheese than it called for in the recipe. Still seemed like there was something missing. Very tastey, but I'm going to keep hunting for a recipe that has that missing oompff.

Barbie's Tuna Salad

Just found this virtually by accident. In the midst of major yard work and worked up an appetite, but just didn't have time to run out either for groceries or food. With the sparse fridge, cluttered work space & oppressive heat outside, I wanted something cool, fresh, simple, quick & satisfying. Tuna salad sandwiches sounded spot on. After a quick search, found this recipe and had almost all the ingredients on hand. Whipped up a batch adding just a touch of salt & pepper. Substituted fresh cilantro for the parsley as that was the one thing I didn't have. Served it as sandwiches on hotdog buns with lettuce & tomato. Sooooooooo good! What an unexpected treat on a sweaty workday! Thank you so much for sharing it.

Chicken with Chipotle

Exceptional! Truly this is a simple and sensational recipe. Used 3 peppers rather than 2 because we like heat. Did not add salt, but otherwise followed the recipe to a T. Served with stuffed peppers and black beans. Amazingly good.

Fantastic Fennel Bruschetta

Good but have had better. The hubby can't eat raw tomatoes, so as well as the normal batch, I made a batch with bell peppers instead. Chopped the peppers and boiled them for 8 minutes. Then shocked them in ice water. Wanted them not raw, but still crisp. The batch with the peppers in place of the tomatoes completely outshone the first batch. Even tomato lovers were snagging the pepper batch instead.

Spinach Lentil Soup

Very tastey. Used salsa verde instead of regular salsa because that was what we had on hand. Added some fresh garlic, cayenne, cumin & garlic powder as well. The taste was fresh and.....well....healthy. But also just plain good. A nice way to have a good for you meal that you can truly enjoy. And the hubby LOVED it!
