Croutons

This was super easy. I had some sour dough bread and it made great croutons. I found I needed to cook them for another 5 minutes for them to be the right crunchiness. I went very light on the garlic salt, and I sprinkled on some dried parsley just for color.

Calypso Black Bean Soup

O.k. so I like to try soup recipes out on my family -- we have found a few really good favorites that way. However, I would not recommend trying this recipe out on your kids -- maybe an adventurous spouse or friend. The banana/mango/coconut milk combination was just really weird and overly sweet. I gave it a 2 because it was at least interesting. Maybe the banana was too ripe, I don't know. I cooked up some peppers and onions to add at the end to try and save it and that did help some. The color was really strange pureed.

Asian Lettuce Wraps

Every once in a while I print off recipes...but a lot of the time I never use them. I made this recipe tonight and it was sooooo good! Even my 12-year-old loved it. The pickled ginger was a little expensive, but since I love the recipe, I suppose I'll end up using it all. I think I even like it better than our favorite chinese restaurant (could be because I made it myself and was so proud of it). I even made some vegetarian for my daughter with Boca and she liked it. You won't be sorry.

Argentine Lentil Stew

Barbecue sauce in soup turned out to be a little strange. We all ate it, and it was o.k., but I wouldn't make it again. I would definitely put the carrots, onions, apples, and tomatoes in at the beginning so they get soft (the apple was still a little crunchy after 20 minutes).

Lime Chicken Soft Tacos

Sweet Potato, Carrot, Apple, and Red Lentil Soup

The flavor of this soup was excellent...but the consistency turned out something like baby food and the family didn't care for that. I'm going to make it again and maybe only puree about 1/3 of it and leave the rest as is. Good soup though.

Greek Lentil Soup (Fakes)

This is a great soup that was easy to make. My husband accidentally poured in too much vinegar and ruined his (ha). Definitely use the vinegar sparingly -- but is really does add to the soup. Thanks for sharing this recipe. My kids ate it too.

Justin's Hoosier Daddy Chili

This recipe has become "my recipe" for chili. I tried a lot of recipes before I settled on this one. This is not really a thick recipe, but my favorite part of the soup is the broth part anyway. We cut way back on the chili powder because the kids were having a hard time eating it. Other than that, keep the recipe the way it is.

Mulligatawny Soup I

This soup is so delicious and easy to make. This is now one of my top 5 soup recipes (we like soup). I cut the butter in half and didn't use quite all of the cream because we're watching our calories, but I don't think it affects the flavor at all. The kids like it, too.

Herbed Potato Soup

I was looking for a recipe without ham or bacon and this one was really good. I liked the "herb" taste with the rosemary and thyme. I added a small amount of finely chopped carrot for color and nutrition, plus I added a small amount of cheddar, although I think it would have been just as good without it. I would double the recipe since there was just one medium bowl for the 4 of us and no leftovers. Very nice soup.
