Creamy Caramel Flan

I absolutely love this recipe. I've made it three times. Once, I took it out too early (it had baked for the full 60 min, but still wiggled too much) and it never set up, but it was still a delicious custard. I'd recommend using a touch/firmness test rather than going exclusively by the clock. A winner!

Banana Crumb Muffins

As good as it gets! And the recipe is forgiving ... 2 1/2 bananas ... fresh, frozen, it's all good. Also good without the crumb topping, and makes a pretty awesome banana cupcake with some cream cheese or caramel icing.

Acorn Squash

Great taste, although IMHO the filling was a tad too liquidy for my taste. I wish there was a method to make it bake up crunchy. I guess the fact that it's steaming in the oven makes that impossible. Still, a great veggie side recipe that the kids will eat!

Gourmet Sweet Potato Classic

One of the classic Thanksgiving recipes. This one is a keeper because it combines the sweet creaminess of the mashed sweet potatoes with the crunchy saltiness of nuts. Easy (even better) to make ahead!

Cheesy Polenta

Good taste & consistency! I halved the recipe and used parmesean instead of cheddar. Also added some snipped fresh basil. Great side dish - filling!

Bigos (Hunter's Stew)

Yup, this is the authentic Bigos! The longer you cook it, the better, and it gets better after a day or so in the fridge. It's a labor of love! Getting dried mushrooms is a bit tricky. Look up "dried polish borowiki" on the internet and you can find several mail order sites. Thanks for the recipe!

Too Much Chocolate Cake

I literally threw this cake together in 5 minutes as I was getting dinner together. Luckily, I had all the ingredients on hand. I used a box of instant chocolate pudding with caramel chips, which was slightly smaller than the recipe's 5.7 oz box recommendation, but there seemed to be no lack of moistness, texture or taste. Really an easy, foolproof recipe! Thanks!

Sweet Potato-Turkey Meatloaf

Hmmm. What did I do wrong? The meatloaf came out more like a pate - slices would not hold together. This made the children verrrrry suspicious! Perhaps the size of the sweet potato makes a difference? Admittedly I used a pretty big sweet potato, but I didn't expect the consistency of *gulp* raw ground meat. All of this being said, the taste of the meatloaf was really quite good - even for those who don't love the taste of ground turkey. Maybe the original contributor of this recipe (or someone who's had success) could suggest a measured amount of sweet potato?

Spinach and Strawberry Salad

What more can be said? This is a wonderful taste combination that is easy to throw together and helps get you to that 5-a-day goal! I used red wine vinegar and it was equally wonderful! My husband, who "hates" veggies raved about this one to his friends (who all looked at him like he was crazy...)

Cornish Finnish Michigan Pasties

Great Pasties! The crust was easy to make, although I added salt to make it a bit more savory. I followed the recipe exactly and it made 12 generously sized pies. I baked half and froze half on a cookie sheet, transferring them to a freezer bag after they were frozen. I baked the frozen ones in a 425 degree oven for about 50 minutes, and they came out perfect. This is definitely a keeper!
