Race Day Salsa
First time I made the salsa as written, it was good. I made it again with the beans on hand, which were not low-sodium and I have to say, it tasted even better. I did rinse the beans to rid them of excess salt, and it may just be me but I could tell the difference. We used it to top tacos, in quesadillas as well as a dip for chips. Also, I added just a dash of cayenne. It's now a raceday staple. Thanks for posting it.

Megan's Amazing Spaghetti and Meatballs
The sauce was just wonderful. First time out I didn't have any wine on hand, but it was very good. Made it again with wine and it just blew me away. The only changes we made were to substitute Splenda for sugar and for the meatballs we sliced string cheese into small rounds and hid them inside the meatballs. The recipe says it serves 6 but we served 8 good eaters, with a small salad on the side. Simply a great meal.

Green Apple, Jicama, and Prawn Salad with Mint, Lemongrass, and Dijon Dressing
This is a very tasty dish for sure. The only change I made was to use rice vinegar instead of white. A little labor intensive, but so worth it. Salad does need to sit a little while to let the dressing do it's thing, but as the directions say don't add the shrimp til it's time to serve. Thank you for a great recipe.
